This is going to sound ridiculous but after some research for a mini-article in a national women's magazine, I've found differences in Canadian and American choices for pet names. Some of the top choices in Canada are "muffin" (that's right, "muffin") or "dear", while Americans prefer nicknames such as "baby" or "sweetie". Strange, but there it is.

Canada doesn't have it's own special language. (we speak english)
I do not know much about western traditions. (In the east--maritimes-- people might say --my chicken, my duckie. but probably for children)
Sorry I can't be of any real help but for sweetheart I would just say sweetheart, dear, honey, sweetie, --the same as anywhere else.

There does not seem to be any special names for sweetheart in Canada.....

Everyone has their own 'special' names for their sweethearts
take your pick...........

The only exclusive Canadian words I can think of is toque/wool hat and Chinook.................warm winds that I hope come back
soon.........

Okay, sorry, I'll be serious.
I live in Alberta, and seriously, I can't think of any nicknames that would be different from what you already know.
Just call her whatever you'd call a girl from wherever you're from! :)
