salt n peppa
2oz cornflour
2oz plain flour
lemon juice
no eggs makes for a perfect batter..if you want it yellower..use a bit of turmeric

Batter
1 cup flour
1 tablespoon malt vinegar
1 teaspoon baking powder
1 teaspoon salt
12 ounces water

the nearest you will get to it at home is, put whatever amount of self raising flour you want in a mixing bowl. a good pinch of salt and a pinch of either bicarbonate of soda or baking powder in gradually whisk in cold water until you have a consistancy similar to double cream.heat your fat or oil till it's just starting to smoke. throw a bit of the batter in the pan and if the batter runs of in small balls it's okay if it runs in a length it wants thinning a bit.

flour salt beer - whisk together till lump free and then flour your fish and dip in and then straight into fryer. the beer keeps the batter light and fluffy. make sure you don't get too much flour on the fish too as this can turn into stodge under the batter when fried which is minging.
