Will a Dell Optiplex GX 620 run Fedora Core 5?

Simple answer - Yes
If you are only going to use Fedora it should work straight out of the CD/DVD, if you are dual booting I would suggest a 2nd Hard Drive

Don't forget an ethernet connection to the Net or Internetable network as there will be lots of updates (not like the Windows ones) so you have the latest of everything.

I would first suggest a "Live" disk such as Ubuntu or especially PCLinuxOS if you are not used to Linux setups

I have run BSD on a GX1, no problems.
