Beans, as well as such gassy goods as cabbage, soybeans, peas and onions, are naturally sweetened with a family of sugars called oligosaccharides. These sugars are big, clumsy molecules -- too big to slip into your body through the lining of the small intestine. Normally enzymes in the small intestine would rush in and snap these molecules apart like blocks of Lego. But due to a gross oversight, an anti-oligosaccharide enzyme is not standard equipment in a human being.
So these complex sugars pass unmolested through the small intestine and enter the large intestine still bearing valuable nutrients. Unabashed at digging into leftovers, the less reputable bacteria among the 200 strains in your large-intestine start to chow down. Their population grows as they divide into new generations to take advantage of the bounty. And as they gulp in the big sugars, they let out gas. In essence, your gut accumulates millions of wee bacterial farts.

Legumes contain an incomplete amino acid chain which the body is unable to digest and use unless you also eat a grain containing the other half of the amino acid puzzle. The undigested starches feed other bacteria in the gut, and they burp! Those burps add up after a while, and you get the idea. They smell because the gas that is burped is methane- the same wonderful gas that gives sewers such a wonderful scent. Being lighter than air, and warmer to boot, the aromatic methane rises and you get the whiff. By the way, poots and toots float and stink. Sinkers aren't stinkers.

Because Baked Beans are both protein and roughage.
The protein is responsible for the smell and the roughage makes gases in your bowel and these come through as flatulence. Posh name for a fart.
Other foods with roughage have the same effect. All Bran, Bran Flakes, peas etc. These combined with eggs, bacon, beef, etc make the gas and then the smell.

Not just baked beans,
any beans.
they are so small so they don't go through the large intestine.
so they don't get digested as much and somehow that causes lots of farting.

Try adding a nice perfume to the pan so it doesnt smell so bad.
Caused by strong reaction in stomach which produces excessive gas. Think of your Ar-se as a valve without which you could explode or spontaneously combust.

They take a while to digest, causing the gut to work harder by producing more stomach acid to break them down, producing the side effect of gas. Anything thats been sat there a while is going to small horrible i suppose!
