Well, culturally speaking, most Koreans do not have a set "traditional" Korean Christmas meal. A bigger holiday would be the "New Year" celebration (using the Lunar calendar so it falls sometime during February).
However, as with any meal, these are givens (guaranteed to be at the table):
1) a bowl of rice
2) multiple side dishes (that everyone eats out of), called banchan. There are at least 5-10 banchan per meal. They can be fresh made or the kind that keeps well (such as jutgal, seasoned seafood).
3) ddukgook (rice cake soup, with the sticky rice cakes, not the airy american kind).
4) kimchi (pickled spicy cabbage, which could be included as a banchan, or side dish. However, it's such an essential staple that I listed it separately. There are tons of different kinds.)

Winter Kimchi (fermented cabbage with lots of chili sauce) aids digestions. That is a must side dish to go along with, Chop chay a clear noodle dish with vegatables and mushroom sewrved hot, bugolgi a beef dish of thinly sliced beef, pumpkin soup, and sweet potates and fish grilled, usually pike or mackeral. There are so many foods that can be served. Don't forgetthe sticky rice! Desserts in the Korean culture are not as sweet and sugary. They eat lots of beans boiled with sugar coating you can buy at the korean markets, rice cakes, sweet rice drink with pine nuts, and lots of fruits like melons. As long as you have the rice, many side dishes and Kimchi you are sure to have a great dinner!
