I have 2 favorites: homemade waffles with butter and maple syrup and country sausage; mushroom and cheese omelet, toast made from artisan bread with real butter and good homemade preserves. Lots of good coffee go great with both.

I'm a southern boy, and biscuits and gravy is the best!
Cook one pound of your favorite bulk (not links or pre made patty) sausage. Hot if you like, regular if you don't.
A little onion is a good thing, but some people will squeal and tell you "it isn't traditional!" It's your breakfast, tell 'em to pound sand.
When the sausage is cooked, pour off any excess fat and dust with 3 tablespoons of flour. Stir this in and allow to cook over medium heat for 3 minutes. (This takes away the flour-y taste).
Slowly add milk. 2% is fine, even fat free will work. Stir. The gravy will thicken as it boils. Get the consistency that you like!
Season with salt and rather a lot of black pepper. I don't know why, but black pepper is the spice of choice.
Ladle over split biscuits, grab a up of coffee, and start your day the Deep South way!

Coffee with cream liquer. If I have all morning to make it, home fries with whatever meat's on hand, mushrooms, onions, whatever veggies I can defrost in the microwave (broccoli, cauliflower, stir fry mix) with eggs poured through it and cheese melted on top. Or creamed dried beef on the home fries. Hey, wait...I could put creamed dried beef over the whole mess, couldn't I?
Liver and onions...WOW, that's a hardcore breakfast. Has my mouth watering.

Mostly cereal, in winter oatmeal. Yes, I love the British custom of breakfast for dinner - all those eggs, bacon, toast, jam, etc.

Love breakfast for dinner. My fav is Ham steak and waffle and scrambled eggs or egg gravy over toast. (hard-boil eggs then slice them up in white sauce with salt and pepper)with ham steak.
