mozrella or something else....thxx

I know mozarella is main but what about parmesan, cheddar or other TYPE( not trade name) of cheese we can or shoud use. what is the effect in taste, look, feel and method of preparation of pizza.

Where I work we use a mixture of 50% mozzarella and 50% provolone.

moz is the most common, but you can get creative with other cheeses of similar consistency. combinations are really good!
