you can get a california roll that is vegetarian, or one made with imitation crab- that is cooked. All other sushi or sashimi is raw.

yes there is shrimp tempura and that is a fried shrimp made into sushi. A calafonia has imitation crab which is fish and is cooked. There is also eel and it is cooked. A sweet shrimp is cooked. A philadelphia roll contains smoked salmon. There are vegetarian rolls. There are also sour plum and cucumber rolls. Some other things are cooked like squid and octopus. You can get tempura which is fried vegtables they give miso also. Edamame is cooked as well. Sometimes somone will make something special up for you.
I eat raw stuff mostly, but started with cooked and veggie sushi.

The basic parts of sushimi and sushi are the boiled rice and the seaweed sheet...Certain sushi are made with strips of cucumber, or other veggies such as avocado strips or zucchini ... Others with smoked salmon or shrimp, and others have surimi in the center (surimi is cooked white fish with crab flavouring)... They are all delicious...
My favourites lare the ones with raw tuna.
It's all a question of getting used to the different textures, and in ones witrh raw fish, it is sliced very thin, so it isn't as if you were chewing big chunks of fish!
If you do try it...go easy on the Wasabe sauce (japanese green mustard....it's hotter than the devil...and will clear your sinuses!!! Just use a dollop the size equivalent of a small pea...dissolved in a good spoonful of soy sauce to add a bit of "zing" to your sushi...
Absolutely delicious!

There are cooked sushi rolls. Avoid sashimi because that means raw fish. You can order tempura rolls that are stuffed with tempura-fried fish or veggies and in some cases the entire roll is fried. You can also order Unagi which is cooked eel in a sweet sauce. The Caterpillar roll that most places have is unagi inside and avocado outside. Very good stuff!! And maybe give some raw fish a shot.... ;)

I'm a vegetarian and there are veggie rolls that you can buy at sushi restaurants. It is usually called a veggie roll, but read the descriptions on the menu and it will tell you all of the ingredients.

Unagi and spider rolls are cooked, and california rolls are great starters too.
There are cucumber rolls and many veggie rolls. Your sushi restraunt will have their own offerings.
Don't be afriad. I can't stand cooked fish, but love sushi.
When you try the "raw" stuff, rest assured that it is "sushi grade" and safe to eat. The tuna is a good one to try first. I reccommend yellowtail or abaco for a starter.
Enjoy... It's the best!

Sushi refers to the style of rice that is around the vegetables and meat (The rice is very tasty by itself, by the way), and does not necessarily mean raw meat. I have had loads of sushi and only tried raw fish once.
Also the raw varieties are usually treated with something that is antimicrobial, even though they aren't heat cooked.

Try going into a place sushi place and asking them. Almost all have the California roles. They are crap, but beginners like them. Also some places have something like "Smoked Sake" , smoked salmon, not raw, but smoked. Also some carry a backed/broiled dish called TNT or dynamite, these are scallops with cream cheese in foil and are backed or broiled. Tasty! Give it a try. No-one likes a picky eater. 10 billion Asians can't be wrong.
