A sheep and a goat are two different animals. A lamb is a baby sheep. A ram is a male sheep. And mutton is the meat from a sheep.

Something tells me this is not the answer you wanted but, you were not specific.
Goat is a little gamey but, prepared properly (pit roasted) it is very good.
Lamb is good too albeit a little more sophisticated.

The domestic sheep/lamb (Ovis aries), the most common species of the sheep genus (Ovis), is a woolly ruminant quadruped which probably descends from the wild mouflon of south-central and south-west Asia. Sheep breeders refer to female sheep as ewes, intact males as rams, castrated males as wethers, yearlings as hoggets, and younger sheep as lambs. In sheep husbandry, a group of sheep is called a herd, flock or mob.

The domestic goat (Capra aegagrus hircus) is a domesticated subspecies of the wild goat of southwest Asia and eastern Europe. It is a member of the bovine family, and is closely related to the sheep, both being in the goat antelope group.
Female goats are referred to as does or nannies, intact males as bucks or billies; their offspring are kids. Castrated males are wethers. Goat meat is sometimes called chevon.

A lamb is a baby sheep, and it has a sweet and tender flavor. A goat is an adult animal, and it is different than a sheep (of course). The meat is not as sweet/tender.
