I think the best way is creole style. There is a mixture of flavour, aroma and off course the most important thing is the "taste". You know all caribbean people love their belly.

4 (4 ounce) boneless, skinless chicken breasts
4 medium green onions, sliced
1 jalapeno chili, seeded and chopped (add more or less if desired)
1/3 cup lemon juice
1/4 cup honey
2 teaspoons dried thyme
2 teaspoons olive oil
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Salt and pepper to taste
Combine all ingredients except chicken in a microwave-safe bowl. Heat marinade in the microwave for a couple seconds to soften the honey. Mix well. Place chicken in a shallow glass dish or resealable plastic bag. Pour marinade over chicken and turn to coat. Cover and refrigerate at least 2 hours. Spray a grill or broiler with nonstick spray. Remove chicken from marinade and place on rack. Cover and grill or broil for 6-7 minutes per side or until no longer pink. Baste with marinade during cooking but discard any unused marinade before serving.
Makes 4 Servings

This is from a cookbook I got in Haiti. I haven't tried this particular recipe (yet), but it sure sounds good to me!
Chicken With Coconut
2 chickens, weighing about 2 1/2 pounds each, split into halves
Salt, pepper, flour
Oil
2 medium onions, sliced
3 medium tomatoes, sliced
3/4 teaspoon curry powder
Pinch saffron
1/3 cup grated coconut
3 cups chicken bouillon
Paprika to taste
Put salt, pepper and flour into a large paper bag. Put chicken in bag and shake until well coated.
Brown in oil in thick skillet. Remove from pan and gently cook onions, sliced pepper, tomatoes, curry, waffron and paprika. Return chicken to pan and cook over low heat until tender.
While chicken is cooking, simmer coconut in bouillon 10 minutes. Strain and pour over chicken. Stir well, allow to blend and serve.
