Pumpkin Cheesecake with Caramel Swirl
serves 10
Crust:
1 1/2 cups ground gingersnap cookies
1 1/2 cups toasted pecans, (about 6 ounces)
1/4 cup firmly packed brown sugar
1/4 cup unsalted butter, melted
Filling:
4 8 oz. packages cream cheese, room temperature
1 2/3 cups sugar
1 1/2 cups canned pumpkin
9 tablespoons whipping cream
1 teaspoon ground cinnamon
1 teaspoon ground allspice
4 large eggs
1 tablespoon caramel sauce
1 cup sour cream
For crust: Preheat oven to 350 degrees F. Finely grind ground cookies, pecans, and sugar in processor. Add melted butter and blend until combined. Press crust mixture onto bottom and up sides of 9-inch spring form pan with 2 3/4-inch-high sides.
For filling: Using electric mixer, beat cream cheese and sugar in large bowl until light. Transfer 3/4 cup mixture to small bowl; cover tightly and refrigerate to use for topping. Add pumpkin, 4 tablespoons whipping cream, ground cinnamon and ground allspice to mixture in large bowl and beat until well combined. Add eggs 1 at a time, beating just until combined.
Pour filling into crust (filling will almost fill pan). Bake until cheesecake puffs, top browns and center moves only slightly when pan is shaken, about 1 hour 15 minutes. Transfer cheesecake to rack and cool 10 minutes. Run small sharp knife around cake pan sides to loosen cheesecake. Cool. Cover tightly and refrigerate overnight.
Bring remaining 3/4 cup cream cheese mixture to room temperature. Add remaining 5 tablespoons whipping cream to cream cheese mixture and stir to combine. Press down firmly on edges of cheesecake to even thickness. Pour cream cheese mixture over cheesecake spreading evenly. Spoon caramel sauce
in lines over cream cheese mixture. Using tip of knife, swirl caramel sauce into cream cheese mixture. (Can be prepared 1 day ahead. Cover and refrigerate.)
Release pan sides from cheesecake. Spoon sour cream into pastry bag fitted with small star tip (do not stir before using). Pipe decorative border around cheesecake and serve.

There are obviously millions of desserts you can bring (just look at all the suggestions already). To make it easy on the hostess bring something that you do not have to put in the fridge (fridge space can be very limited when you are having a party), try to bring something that does not take any preparation while you are there (like you needed a bowl and beaters to whip up some cream) and best of all something that does not require utensils.
I think cookies &/or squares are the best things to bring, try to bring an assortment on a nice tray (the tray can also act as a hostess gift).

*Chess Pie*
Many people have never tried or even heard of Chess Pie. This is a different dessert that will delight friends and family, even while giving you a new topic of conversation for the dinner table.
1 Pie Crust
3 egg yolks
1 tablespoon flour
2/3 cup sugar
1 1/3 cup whipping cream
1/2 teaspoon salt
1 cup dates (cut up)
1 cup chopped walnuts
1 teaspoon vanilla
Prepare a pie crust as follows:
Ingredients:
1/3 cup plus 1 tablespoon shortening
1 cup flour
2 or 3 tablespoons water
Mix shortening into the flour with a fork until mixture is made up of crumly pebble sized lumps. Add water and toss with a fork until batter is moist. Now, using your hands, form the dough into a ball.
Dust a large flat (clean and dry) surface with flour. Place ball of dough on surface; then dust the dough ball. Carefully press ball flat with rolling pin. Dust ball again and flip, repeating the process until dough is eight to nine inches in diameter. Flip dough over rolling pin and lay it into pie tin. Trim edges. Set aside while making filling.
Beat the egg yolks, flour, sugar and salt with a mixer until it is lemon colored and light. Now add whipping cream, the dates, the walnuts and vanilla. Stir, do not beat. When mixture is consistent pour it into the pie shell and move to 350 degree oven. Bake about one hour.
Pie will be done when crust is golden brown.

I got this recipe from Paula Deen show last year. It is FABULOUS!

Savannah Cheesecake Cookies
1 cup all-purpose flour
1/4 cup packed light brown sugar
1 cup chopped pecans
1 stick butter, melted
Filling:
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 eggs
1 teaspoon pure vanilla or almond extract
Fresh berries and mint leaves, for garnish
Preheat oven to 350 degrees F.
Combine flour, brown sugar, pecans, and butter in bowl. Press dough into an ungreased 13 by 9 by 2-inch pan. Bake for 12 to 15 minutes or until lightly browned.
For filling, beat cream cheese and granulated sugar together in a bowl until smooth, using a handheld electric mixer; add eggs and extract; beat well. Pour over crust. Bake for 20 minutes. Cool completely. Cut into squares before serving. Decorate tops with berries and mint leaves.

pumpkin pie or a pumpkin cheesecake are always nice but i have this recipe for what I call Pumpkin Caramel Bliss Cheeseball. It is to die for and everyone always asks for the recipe but I always keep it secret, lucky you, I'll share it with ya 'cause I doubt u'll be sharing it with any of my family.
1 TBSP Pumpkin Spice
1/4 cup sugar
1/4 cup chopped toffee pieces, chopped finely
2TBSP coconut flakes
3 TBSP Dulche de Leche(caramel ice cream topping)
1 tsp cocoa powder
5 oreo cookies, chopped finely(crumbs)
8 oz softened cream cheese
additional 10 oreos
Mix all ingredients, except cream cheese and additional oreos. Then fold the mix in with the cream cheese then blend well. Chill for 2 hrs.
Chop the additional 10 oreos until crumb like. This will be what you roll your balls in/cover the ball with on the outside.
Now, this recipe can be used for either a)one large cheeseball or b)you can shape into 1-in balls for cute individual cheese balls.
Serve on a cheeseball plate or platter with graham crackers, graham cracker twists, sugar cookies and vanilla wafers.
Everyone will love it!

I would honestly just bake up a few dozen Christmas cookies. Although they may be to hard to go through with the frosting and all. A simpler one would just be to find a recipe for "Mint Snowballs" or something like that.
Something different that sounds good :)

this one works every time and is guaranteed to be commented on above all else and it is soooo easy! melt a pack of milk chocolate chips in a bowl in the microwave(stir every 30 secs or so to prevent burning) dip a whole fresh strawberry in almost to the green top, put on a plate and chill in fridge! you can also melt a little white chocolate and drizzle over milk chocolate for that finishing touch. Cheap, fast and tasty!
