I'm hosting a shower on a Saturday at 1:30pm. I thought a brunch would be elegant, but the mom-to-be wants finger foods and nothing too heavy. Any ideas?

This recipe is the easiest, and has always been a favorite! You can make as simple or complex as you like! The main ingredients are: 1 bag of hashbrowns 1 8 oz can of cream of chicken/mushroom/onion (whichever you prefer) 8oz of sour cream 1 pkg of shredded cheese salt and pepper Mix all ingredients together in a bowl. Take out half, top that with cheese and any other toppings (such as peppers, onions, mushrooms, ham or turkey cubes, bacon, etc). Put the other half of the mixture on top, and sprinkle with cheese. Bake at 400 degrees for about 30 minutes. It's delicious! If you need more, just double the recipe. In my opinion, I would make 2-3 pans of the double recipe, and also offer mixed fruit with it or you can add a type of bread. Just so there is a couple of options.

FIrst of all, do what it easiest for you since you are the one doing the work. When you do finger foods buffet, you still have to put out forks and plates for the guests to eat them with and all those little individual servings require MUCH more detail and attention than just putting out 3 or 4 casserole type dishes for serve yourself brunch. Unless you are hiring waitresses to walk around and serve people bite size crudites on silver platters and have 5 people to help you assemble all your last minute hot finger foods, throw that idea out the window! :)
My favorite brunch menu:
1) smoked salmon platter with mini bagels, capers, cream cheese and lemons
2) smoked ham quiche or fritatta
3) some type of store bought pastries
4) fresh fruit with yogurt or whipped cream for dipping
5) baked pork tenderloins sliced thin, accompanied by dollar rolls and a jar of fancy mustard or sandwhich spread for do it yourself sandwiches

If you want to eat truly healthy, lose body fat consistently, normalize your blood pressure, cholesterol levels, prevent cancer, and even boost your brain health and energy levels, you may have heard all over the news that the Paleo Diet has been found to be one of the best methods of achieving all of these benefits compared to any other popular "fad" diets out there. Go here https://bitly.im/aOfdJ

The truth is that the Paleo Diet will never be considered a fad because it's just simply the way that humans evolved to eat over approximately 2 million years. And eating in a similar fashion to our ancestors has been proven time and time again to offer amazing health benefits, including prevention of most diseases of civilization such as cancer, heart disease, alzheimers, and other chronic conditions that are mostly caused by poor diet and lifestyle. One of the biggest misunderstandings about the Paleo Diet is that it's a meat-eating diet, or a super low-carb diet. This is not true

Finger foods, brunch, and elegant... Canapes are your best bet, and serve a good punch since Mimosas aren't fair for the mum to be. Try some of these.

Another idea for the tortilla rolls that someone brought up - we call them pinwheels, and you take one 8 oz package cream cheese, soften it, add 1 package ranch dip mix, mix it, and spread it over about 4 large tortillas (use the many flavored tortillas out there to add even more flavor and color, like Sun Dried Tomato Basil and the green one, which I think is either Spinach or Vegetable). Roll them up tightly and put in the fridge for about an hour. Then cut them into about 1/2"-1" pieces.

Mini quiches and fruit with a dip. I like a dip that uses pineapple juice, sugar and cornstarch. You cook that until it's thick, then process it with cream cheese and cool whip. Really good with strawberries
