There are thousands of websites. Just google vegetarian recipes. There are also tons of books. One I really like is called the Starving students vegetarian cookbook. I'm not a starving student but they have easy and inexpensive recipes with ingredients that are in every market.

Allrecipes.com is the best, you can choose the vegetarian category and pick recipes that are submitted from people, and tried and rated by others! I only use this one site, because if 100 people say something is 5 stars, it always tastes awesome, also, people leave tips on different ingredients to add and different ways to perfect the recipe. Trust me this site is great, you do not have to worry about, well it sounds good...but how will it taste. (My number one complaint of veggie recipes!)

If you go to most bookstores, there will be a plethora of vegetarian/vegan books in the cookbook section. A few that I own and love are: "Vegan with a Vengeance," "La Dolce Vegan," and "The Chicago Diner Cookbook." Good (and free) websites for vegetarian recipes are www.allrecipes.com (just click on "Vegetarian and Vegan" under the search options), and also www.recipezaar.com (search under "vegetarian recipes).

This is going to sound really obvious, but why not type 'vegetarian recipes' into Google and take your pick from loads and loads of sites that come up! Or just pop out to a cheap book shop (if you're in UK you've probably got 'The Works' somewhere near you) These shops (and supermarkets) will have lots of vegetarian cookbooks on their shelves. Have fun!

Almond Rice Casserole
[Reset]
Keys : Nuts Vegetarian Vegan Main Dish Casseroles Microwave
Ingredients :
3cupRice, brown, cooked
1cupTVP granules or flakes
7/8cupwater, hot
1tblKetchup
1tblPeanut oil
1medOnion, chopped
1/2cupAlmonds, roasted, sliced
2tblMiso, light
1/2tspThyme
1tspMarjoram
1/2tspSalt
Method :
* Set the cooked rice aside.
* Combine the TVP with the hot water and ketchup. Mix. Set aside.
* Saute the onion in the peanut oil.
* Mix rice, TVP, cooked onions and almonds in a 2 quart casserole. Mix the remaining ingredients together and stir in.
* For oven baking, cover casserole with foil and bake at 350 deg for 30 minutes. To microwave, cover tightly with plastic wrap and heat on high for 10 minutes.
* For a mushroom variation: instead of the almonds, add 1 cup sliced fresh shiitake mushrooms to the rice and other ingredients and bake as above.

I've been subscribing to Vegetarian Times for years. They have a wide variety of recipes and tips for vegetarians along with health and environmental issues. Vegetariantimes.com is a great source for recipes.

Though I just Yahoo! search for alot of them, my favorite books are Vegitarian: Tasty recipes for everyday bought at barnes and nobles. Also Curries by susabba tee. I sustitute the meat sections with potatoes and beans..etc.
Also... Thai a cookbook by parragon publishing out of the UK
you will find that curry recipeis (curry describes a style of cooking, not always a spicy way) are very adaptable to vegitarian diets. Many asian countrys that use the curry style cuisine are vegitarians for personal or religious reasons.

My favourite site for recipes is recipezaar. I've found some really nice stuff on there. It's been particularly good for when I've found weird stuff that I've had no idea what to do with (e.g. Quinoa). The only fault with it is that it's American so sometimes stuff has different names (e.g. garbanzo beans instead of chickpeas, cilantro rather than coriander).
Local libraries often have a good range of cookbooks.
My favourite veggie chef is Nadine Abensur (Cranks) - her recipes are really interesting and different. Especially liked "Cranks Bible"
