i'm cooking vegan cookies and i want to know how much applesauce to use instead of and egg.

Applesauce makes and excellent egg replacer in cookies! Just use 1/4 cup unsweetened applesauce per egg. I do this all the time and the cookies come out better than with eggs.

You can't use Applesauce to replace egg, you CAN use applesauce to replace OIL.

Here are some replacements that you CAN use:

Ener-G Egg Replacer - follow directions on box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

Homemade egg substitute recipe

Homemade egg substitutes are less expensive and just as satisfactory. They also have few calories. Here's a low cholesterol egg substitute recipe:

1 tablespoon of nonfat dry milk powder
2 egg whites from large eggs
4 drops of yellow food color

Sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended. This makes 1/4 cup, which is equal to 1 large egg. If you use this homemade substitute for scrambled eggs, cook it in vegetable oil or margarine so the eggs won't be too dry.

Um.. ya I'm not a vegan.. but just wondering why the hell would you use applesauce to replace an egg.. Something is just not computing for me.. as far as measuring it take an egg brake it in half, save the shell refill it with applesauce.. that should work out splendidly! ! !

I know you can use applesauce in place of half of your shortening or oil, but I didn't know you could do it for eggs. Don't know what to tell you, this is the first I have heard of this.

1 TB per egg.

You can also use ff mayo 2 TB per egg.

Applesauce WILL replace eggs in a cake or brownie. I'm not so sure about cookies. It's worth a try!
