The best sushi is no sushi. The Bible makes several implications that the best meat is cooked meat. But it never specifically forbids eating raw meat. Just make sure the fish is clean; mainly scaled fish that swim with fins on the side. Also, the fresher the better. Meat that has been dead for a while is not good for you. Perhaps Hamache, Hirame, Ikura, Maguro, Saba, Sake, Tai, Tekka Maki, Temaki, or Toro would all be good kinds of sushi that fit into this category.

Sushi is my favorite food. My husband knows that any and every time that he asks "what would you like to eat?" the answer will always be SUSHI. Which is a pity for him because he doesn't like it. Here in Peru, where there is a wonderful gourmet and culinary boom, there is the most wonderful and fresh and varied fish and seafood. So, as you can imagine, sushi in Peru is to die for. Did you know that Nobu, the ultra famous chef and owner with Robert De Niro of the Nobu restaurants, lived and developed a very important part of his career in Lima, Peru? The restaurant that he started with a partner, the Matsuei, is still one of the best sushi restaurants in Lima. Here, Nobu learned the use of many original spices that he incorporated into his culinary art. He still talks about it on every interview. Like, for instance, he was very inspired by the Peruvian national dish "Ceviche", which is a dish made with raw fish that is marinated and "cooked" with lime juice, garlic, hot peppers, cilantro, salt and pepper, garnished with red onions. If you like sushi you would also love Ceviche. Peruvian food has made Lima the new "it" city to go and get a fantastic gourmet experience.

I am fond of unagi- eel, also spider rolls are really good, ahi of course. But if you are just trying it out, go with the veg til you get your sea legs. BTW, that green blob is wasabi and meant to be mixed with soy sauce for sushi dipping. It tastes like very strong horseradish and is delish if you know it is coming. DO NOT pop the whole thing in your mouth or you will cry.

I LIVE to eat sushi! The biggest sushi misconception is that it's all raw. Most of my favorite sushi is already cooked, and although names change from sushi joint to sushi joint, my favorites are any kind of crunch roll (crunch a.k.a. tempura), any sort of shrimp roll OR my number one favorite, a grouper tempura roll.

As a side note, most people who are new to sushi love California rolls, but I can't stand the cucumber.

That's like asking, "which is better - apples or oranges?" It depends on your tastes. As for me, I like the tuna with cream cheese sushi. If you're a beginner, I suggest trying cooked sushis.

Amaebi, with the heads (few sushi places make them any more). Make sure to get the heads fried -- they taste like potato chips and freak people out when you eat them. The tails can come raw or not; if you trust your sushi bar, get them raw. If you don't . . . don't get uncooked anything.

Anything from Ninja Sushi in Honolulu. My favorite there is the Tiger Maki.

Elsewhere, however, you can't usually go wrong with nigiri.
