Taramasalata main ingredient is fish roe, (salted carp roe called taramas is the base of the recipe). Roe refer to eggs of the female fish, enclosed in an ovarian membrane. Currently, taramas are made from carp roe. In olden times, tarama referred to the roe of various species of the gray mullet where the salmon-colored eggs were salted, washed, pressed, dried in the sun, and then encased in wax for sale. Dwindling supply of gray mullet is the reason of shifting to carp roe.

Fish roe is a rich source of vitamins A and D, very long-chain fatty acids, and zinc. Since deficiencies of all of these compounds during pregnancy can cause birth defects, it is a tribute to the wisdom of primitive peoples that they valued roe as a superfood, necessary for healthy children.

Taramasalata is Greek fish roe paste which is a creamy pink or beige paste made from smoked fish roe. It is usually served in the form of a pâté or dip as an appetizer or snack.

Taramasalata is a compound name derived from a modern Greek word taramas meaning "preserved roe", and from Turkish word tarama meaning "preparation of soft roe or red caviar" + salata meaning "salad".

Simple recipe includes juice of lemons, olive oil, peeled & coarsely chopped yellow onion, and mashed potatoes which are blended until smooth in a food processor.☺

Taramosalata, often misspelled 'taramasalata' is a Greek meze. It is traditionally made from tarama, the salted and cured roe of the carp, though blends based on other forms of fish roe, particularly cod, have become more common.

The roe is mixed with lemon juice, onions, garlic, and olive oil. Bread crumbs, milk, cream and even gelatine are sometimes added.

The colour can vary from orange to pink, depending on the type of roe used. Mass-produced taramosalata can often be a bright pink colour due to the addition of food colouring.

4 thick slices stale white bread
1/4 cup cold milk
2 tablespoons cold milk
1/2 cup fish roe
1 clove garlic, crushed
1/2 small onion, finely minced
2 lemons - juiced (to taste)
