You didn't say whether you were planning to serve a sit-down meal or if it's just a fancy cocktail party.
If it's a sit-down, and it's really that fancy, I'd recommend having a caterer, otherwise you'll be slaving in the kitchen (in a fancy dress!) while your guests wait....fancy food requires presentation, a buffet will not cut it.
If you go with a cocktail approach, stick with individual bites of food, nothing where the guest has to serve something (ie: spreading pate or cheese onto crakers, or scooping dip onto veggies or chips, etc) Go with ready-prepared canapés (those are crackers or rounds of toast with fancy little toppings on them. You can put just about anything on them, have a bunch of different kinds, and make each one look pretty!!) mini skewers with a grape, a cube of cheese, and a small pineapple wedge are also great. Cocktail meatballs are good if you serve them on a platter with a fancy toothpick in each one. Stuffed mushroom caps; tiny sausages in pastry (brush the pastry with grainy or dijon mustard before rolling up the sausages, or serve with 2 or 3 small bowls of fancy mustard to dip in); you could do stuffed cherry tomatoes (crab stuffing works great for these!); mini quiches (one bite); puff pastry bites with an escargot and garlic butter inside; mini egg rolls & spring rolls; filo pastry bites with cheese and spinach or sundried tomato inside........
And finish with some sweets, but again, keep them easy to eat without needing plates or forks. Little chocolate truffles, small fancy cookies, squares, or other fancy little sweets & candies would be great.

It really depends upon whether you are having a sit-down dinner party or a cocktail party.
For a sit down dinner party, you should start with snacks and drinks in your living room or parlor. Then the guests should be invited to the table for the dinner. You should plan at least 3 courses. I usually plan an appetizer, salad, pasta or soup, sorbet, entree, and dessert. For appetizers, I vary it up a lot, but a good one is a lobster purse, which is lobster meat and veggies in a saffron sauce wrapped in a phylo dough. Then I usually do a caesar salad. This time of year since it is cold, I like to serve a french onion soup in individually baked bread bowls. For an entree, I like to serve roasts. This time of year, I like to roast a chateubriand. For dessert, creme brulee.
If you are planning a cocktail party, I'd say that you should focus on finger food. I'd put out shrimp cocktail, stuffed mushrooms, guacamole, a cheese board with cheeses and crackers and an array of fruit, an italian antipasto platter with olives, specialty cheeses and cold cuts, and a dip of either spinach in a bread bowl or hot artichoke spinach. I'd also pass around hot appetizers like mozzarella sticks, crab cakes, scallops wrapped in bacon, mixed appetizers or mini quiches.

Nibbles that are non greasy on the fingers and those nibbles with sauce that can be served on chinese spoons.
The idea is to have indivdual servings of food... think shot glasses with osyters, egg mayo and cavier on mini crackers, shrimp wonton on spoons etc..
