I only order the Pho when I don't have alot of time or it's a really cold day and some soup helps warm me up. My perfect Vietnamese meal goes like this:
Fresh, cool Summer Rolls to start
Banh Hoi Bo Lui-Sesame beef wrapped around sweet onion-Served over Vermicelli. AWESOME!!!
Banh Hoi Ga Nuong-Grilled Chicken Braised with Honey-Over Rice or Vermicelli. A very nice "1st Vietnamese experience" for those fearful of new dining experiences. It's not sexy its just grilled chicken, but it's so good that it's a great 1st dish and one that hopefully will pave the way for something more adventurous the next time now that the person knows that Vietnamese food is just awesome home style cooking and they are no longer afraid of the unknown.
Great Desserts and fruit smoothies too.
I am not Vietnamese. I am from New York, and have been eating at my favorite Vietnamese restaurants since I was a teenager (20 years ago). I think the stuff is tasty, healthy and reasonably priced.

During the war, I spent 360 days in Viet Nam, Laos, Thailand, and Cambodia. (I spent no time in their cities, just their rural communities, farmlands, and river transport villages.)
I lived off the economy most of the time. Which meant that I basically ate their food. They only have one cook per community, that's right only one family in a community has cooking utensils, and cooking facilities.
Well, they wouldn't let me eat their fish, or drink their untreated water. They would have made me sick. (You can e-mail me for the reason those two items would have made me sick.)
Now to your question: "Cow Paht" (spelled and pronounced a little different in each of these countries) is my favorite vietnamese food.
What is "Cow Paht" - well literally translated it means rice combination. However, in reality it is sticky rice, sometimes sweetened (with a tropical fruit somewhat like pineapple) and then that sticky rice is combined with whatever vegetable that is in season, and then either chicken or water buffalo (old tough water bufalo, but cut in small enough strips and marianated to be pretty tender).
Well, everytime I entered a new village, I would simply hand out some candy mints, and then ask them if they had "Cow Paht"?
They always smiled when the heard an American say "Cow Paht".
Sorry for the long answer, but your question brought back fond memories, even though it was a terrible war.

Heaps! Love Hu Tieu (which is a clear soup filled with pork and seafood and sometimes quail egg!), Bun Bo Hue (which is a spicier version of Pho and I really love as well), Pho of course!, Com Tam (which is combination broken rice...lovelovelove! and my favourite, recently went to Vietnam, and it's available practically everywhere.)
I really recommend avocado smoothie as well, it's so refreshing and really delicious. My favourite drink on a hot summer's day.

There was this great Vietnamese restaurant I used to go to, but it closed down. My favorite dish was called bun. It also had egg rolls and some kind of pork on it. Then put that nuoc mam? sauce on it (that;s probably wrong, it's been years). I SOOOO miss that restaurant!!

Vietnamese Sub (sorry, don't know the authentic name). Half French baguette, smeared with meat pate and home-made mayonnaise, stuffed with slices of various Vietnamese style ham/processed meat and pickled radish, top with coriander leaves and a bit of fresh chili bits.

I had it many years ago, and don't remember what it was called. It was at a restaurant in Northern California. It was a french roll with marinated thinly sliced beef, some vegetables, cilantro, and a sauce,all wrapped up in a lettuce leaf and dipped in nuoc mam (sp?) sauce. Really, really good.
