Vegans will not eat or use anything derived from an animal... honey is an example because it "uses" bees or wear leather.
Vegetarian is kind of a general term used for some that does not eat meat, but with exceptions:
There are vegetarians that will eat fish, but not "land" animal meat.
There are vegetarians that will eat fish and chicken, but not eat red meat.
There are vegetarians that will eat eggs and milk, but no meat.
etc...
To me it just seems silly to call yourself a vegetarian, but you'll eat fish or chicken... which is meat - protein from an animal source.
In essence, a vegan is stricter type of vegetarian.

From what I know, vegans do not eat any type of animal product - from actual flesh to any product derived from an animal. This includes eggs, dairy, some types of fats, etc. Vegans are a type of vegetarian. Vegetarians encompass of range of non-meat eaters including some who eat eggs and/or dairy. All vegans are vegetarian while not all vegetarians are vegan.

In practice, a vegan (an adherent of veganism) commits to the abstention from consumption or use of animal products, including meat, fish, and poultry, animal gelatin, honey, eggs and dairy products, as well as articles made of silk, fur, wool, bone, leather, feathers, pearls, nacre, coral, sponges and other materials of animal origin. Most vegans also avoid products that have been tested on animals. People become vegans for a variety of reasons, including ethical concerns for animal rights or the environment, as well as more personal reasons such as health benefits and spiritual or religious concerns.
--
Vegetarianism is the practice of not consuming meat, with or without the use of other animal derivatives, such as dairy products or eggs. Some vegetarians choose to also refrain from wearing clothing involving the death of animals, such as leather, silk and fur. Veganism, sometimes called "strict vegetarianism", excludes all animal products from diet and attire, whether or not this involves the actual death of an animal (dairy, eggs, honey, wool and down feathers). Vegetarians are found in countries across the world with varied motivations including religious, financial, ethical, environmental, and health concerns.

Vegetarians can eat eggs and milk. Vegans won't eat anything to do with animals, including things like jello because gelatin comes from hooves.

Vegans are stricter, allowing only veggies to pass their lips, while the term "vegetarian", applies to a broader class of people, who allow some meats (mostly non-red meats, such as fish, etc) and dairy products (like eggs) to pass their lips. Hope this helps.
