The question frames the answer. Do you mean an insulin peak? I think that this is what you mean by spike. An insulin peak in a normal person? This occurs only when the beta cells of the pancreas make too much insulin which is certainly not normal but it is very uncommon. An insulin peak in a diabetic? Ah this is what I think you are after and what happens is that their blood gluocse level will drop - the body will release gluocse from the liver - the gluocse will go up and down like a yo yo. If you have something else in mind please let me know.

If your insulin spiked wouldn't that cause a low blood sugar? I've been diabetic for 21 years now (since I was 14) & I've never heard this term. I know your insulin peeks after injection. I've heard the term "a spike in blood sugar". I hope you find the answer to your question.

nope. amount of food intake doesn't affect insulin production. however, there are medicines like sulfunylureas that help pancreas secrete more insulin.
