We went on the Rhine River cruise last year and stopped at St. Goar. We ate at a little restaurant and had a very delicious creamy broccoli soup. Anyone know a recipe?

Deutsche Brokkoli Suppe (German broccoli soup)
2 pounds broccoli, chopped
4 C chicken broth
2 onions, chopped
1 teasp. garlic, chopped
8 oz. sour cream
3 slices ham, chopped
Oil, Pepper, Salt, Nutmeg

or another recipe:
2 small onions, chopped
2 T oil
1 C white wine
1 pound broccoli
2 C chicken broth
8 oz sour cream
1 teasp. nutmeg
Salt , Pepper
Cornstartch to thicken
Cook the onions and garlic in oil until glazes. Add chopped broccoli and the rest of the ingredients and cook on low for 10 minutes. Add cornstartch to thicken and cook for 2 more minutes.

Cream of Broccoli Soup

Ingredients

(10 servings)

1 ea Bunch of Broccoli
1/4 c Butter
2 ea Onions
2 c Chopped Celery
1 ea Garlic Clove
1/2 c Flour
4 c Milk
4 c Chicken Broth
1/2 ts Marjoram
1/2 ts Thyme
1 x Salt and Pepper
1 x Almond Slivers
1 x Chopped Tomato


Instructions

Trim broccoli and cut into one-half inch thick slices. Steam in salted water until tender. In large sauce pan, melt butter and saute onions, celery and garlic until brown. Stir flour gradually into butter mixture. Add milk slowly, then add chicken broth and herbs. Stir over low heat until soup thickens and boils. Add broccoli, salt and pepper. Serve hot. Top with almond slivers or chopped tomato, if desired.

take fresh broccolis cut into tiny pieces or coursely ground, cooked with salt and little butter till not too soft. make white sauce with milk cornflour pepper salt and cheese powder... mix and give one boil , make it into soup consistancy..for tangy soup add chilly sauce.
