Sometimes this site is really unreal. French food - Osso Buco?

Bouille à Baisse. A Stew with fish and seafood. Marseilles.

A real Coq au Vin.

Crisp fresh baguette warm from the bakery, au nature or with a leetle 'onee. Magnifique!

And yes, an onion soup, although I think the provenance is a little suspect. Alsace?

French onion soup
Properly done.

The beefy broth rich in it's layers of flavours. The onions caramelised and creamy on the tongue. The crouton floating atop, still buttery and crunchy, barely able to support the thick layer of soft, toasted cheese that's dripped and crisped as it's melted down the sides of the steaming soup crock.

It sings through the ages and is second only to a yeasty, warm, fresh baked french stick with lashings of creamy Normandy butter, studded with sea salt crystals as the flavor of France to me.

I don't have one favorite but I just love everything the french make, but I have fantasized quite recently of a croque madame.
A grilled cheese with ham, with a fried egg on top with a cheese sauce poured over to finish the dish. God it was delicious, 1984, I was sitting in a little restaurant outside of the Versailles train station. It comes back every once in a while. I dare not eat it again for fear of dissappointment.

Fillet Mignon covered with a mushroom cream sauce of brandy and dijon mustard, accompanied by garlic and paprika pan fried potatos and aparagus with a shallot butter sauce.

Wash it down with a good Dom Perignon.

(Not a huge fan of the French, but they can sure bloody well cook!)

My favorites are garlic roast chicken, duck confit on a baguette, lots of runny smelly French cheeses and plenty good wine!

It certainly is not snails, french fries and many other dishes , they do create some lovely food
