Why? I can think of many Italian dishes that can be made without meat. Even carbonara could be done with faux bacon. Veggie lasagna is delicious. I love to saute veggies in EVOO, add Barilla sauce and serve with parmesan and toasted pignoli. I grow basil and make my own pesto. It's true that cured meats play a big part in the cuisine but with imagination you can make any dish not involving a big hunk of flesh (like roast or steak) meat free.

There are several that come to mind; however, I am not sure if cheese is included in certain vegan type diets. There is the classic eggplant parmesan. Bruchetta's also come to mind. One could also try Pizza Margharitta which is crust, olive oil, a light tomato sauce (or sliced tomato) with a soft cheese such as provolone. Topped with fresh basil and drizzled with olive oil. The colors suggest a tribute to the Italian flag. This is great on the grill!!

eggplant parmesan, spinach lasagna, zucchini lasagna, pasta primavera, fettucini alfredo, vegetable cheese calzones, and manicotti just to name a few. Don't forget about the "fake meat" soy products out there that easily replace meat in any dish.
