nutty tree like taste

I find them a bit like pecans, which in fact I have substituted for pine nuts in recipes once or twice. (Where I live they are hideously expensive and not always easy to find.)

They are best when used in moderation such as in an Italian "pesto" sauce (pine nuts, fresh basil leaves, fresh Parmesan, olive oil in a blender - drizzled over a nice pasta!)

Sweet with a nutty flavor. The best way to release it to saute them briefly in the a warm(not hot) pan. You have to stand by the pan because they can burn quickly. With the nutty brown colour it releases the oils and they complete a vineagrette(the sweet with the sour).
