This is a recipe of my own devising that’s a little less messy and a little lower in fat than most Moussaka recipes.

Eggplant Moussaka

2 eggplants, peeled

2 onions, chopped
olive oil
2 – 2 ½ lb. ground beef
1 jar of tomato sauce
¼ cup parsley
garlic salt and pepper to taste
1 tsp cinnamon

2 tbsp margarine
3 tbsp flour
2 cups milk
salt and white pepper to taste
1/8 tsp nutmeg

Parmesan or Romano cheese

Eggplant Preparation

Cut eggplant into half-inch rounds (Optional: Can sprinkle with salt and let stand in colander for 15 to 30 minutes.)

Preheat the broiler. Lightly brush eggplant slices with olive oil on both sides. Place on an ungreased cookie sheet until lightly browned. Set aside to cool.

Meat Preparation

Brown hamburger and onions. Add tomato sauce, parsley, garlic salt, pepper, and cinnamon. Simmer till liquid completely reduced.

White Sauce

Melt 3 tbsp of margarine in sauce pan. Blend in 3 tbsp of flour, and then add 2 cups of milk. Stir till thickened. Add salt, white pepper, and nutmeg. Mix in two eggs.

Layer half of eggplant at bottom of lightly greased casserole pan. Top with meat mixture. Layer with rest of eggplant. Top with white sauce. Sprinkle generously with Parmesan or Romano Cheese. Bake at 350 degrees for 45 minutes.

You don't always have to salt eggpplant. Many eggplants now days are grown so that they have light seeds, & these don't need to be salted. The ones with dark seeds still do though.

So: If they have dark seeds, slice & then sprinkle with salt. Leave for a while & then rinse the salt off. This process is to eliminate the bitterness.

Then, fry in vegetable oil.

I love it in vegie burgers. Just prepare as above & then add to whatever you normally have in a burger; cheese, salad, whatever. Or gourmet ingredients like sundried tomato, baby spinach, fetta, etc. Mmm... tasty.

Get one egg plant cooked well in oven peel it grind fine by knife (not by machine) add 2table spoon full of yogurt,2 table spoon full sesame oil or any oil,little salt 1 table spoon full lemon juice mix by spoon, healthy and Delicious sauce.fried also good but squeeze the layers before fry it will not absorb much oil or butter.

Grilled eggplant is yummy. Slice 1/4 thick. brush lightly with olive oil. sprinkle on salt and pepper ( you can use garlic etc. as well for extra flavor) then grill on both sides.

Eggplant Parmesan or in spaghetti sauce. You can always chop it up to put it on a salad if you don't want to take much time to prepare something.

I love eggplant! It's great grilled or baked. Eggplant parmesan is the greatest.

Thinly sliced, coated with egg and dry italian style bread crumbs, then pan fried. mmmmmmm!

Eggplant 'lasagna'. Slice and fry the eggplant, then use it like you would the noodles.

I actually have never made it, I buy it and it's cooked in a red sauce and loaded with cheese...yummmmy
