We're providing a Christmas lunch at church for around sixty people a few of whom are diabetics, in the past we've resorted to fresh fruit salad but would love to serve something more festive.

Here are two that are very good and yet safe

Diabetic Dessert Recipe: Raspberry Mousse
This diabetic dessert will melt in your mouth, taking the smooth texture of mousse and putting a hint of raspberry that will tantalize your taste buds with fruity sweetness. In order to make this diabetic dessert, you'll need the following ingredients:
2/3 c. Strawberry Fanciful
1/8 tsp. cream of tartar
2 egg whites
1/2 c. whipping cream
Add cream of tartar to egg whites, beat until stiff, but not dry. Fold into Strawberry Fanciful. Fold the whipped cream into the fruit mixture. Chill before serving or freeze for frozen mousse. Use any of the Fanciful flavors for variation: Strawberry, blueberry, orange pineapple, pineapple berry or peach.


Diabetic Dessert Recipe: Brownies
Diabetic brownies anyone? This diabetic dessert will give the decedent taste of chocolate brownie sweetness without sending your blood sugar levels through the roof. In order to make this diabetic dessert, you'll need the following ingredients:


2 c. graham cracker crumbs (approximately 24 crackers)
1/2 c. chopped walnuts
3 oz. semi-sweet chocolate
1 1/2 tsp. Sweet-N-Low (6 packs)
1/4 tsp. salt
1 c. skim milk
Heat oven to 350 degrees. Place all ingredients in bowl; blend well. Bake in greased 8x8x2 pan for 30 minutes. Cut in 2-inch squares while warm.

Coming from a family with diabetics, and being one myself, we usually have a dessert trifle.

Get sugar-free Jello (raspberry, strawberry or cherry - for Christmas) and mix the powdered mix with a big tub of Cool Whip. In a bowl place cubes of angel food cake and then cover with some of the Cool whip mixture. Then add fresh or frozen strawberries and/or raspberries that have been sweetened with Splenda. Repeat the layers of cake, cool whip and end with fruit on top. This looks really pretty in a clear bowl, or in individual bowls, and it tastes great. People will not even realize that it is a "sugar free" dessert.

You can make a Christmas Yule log dessert easily. Make the cake from scratch and use splenda instead of sugar. Bake it in a jelly roll pan...waxed paper on the pan below the mix before it is bakes. After it is baked it is easy to roll that way. Use sugar free cooked pudding mix for the cream filling and frost it with sugar free Cool Whip. a bit of cocoa to dust the top and viola! you have a delicious and healthy dessert!

hiya mary i wouldnt worry too much about serving a dessert es[ecially made for diabetics on a one off occasion at such a special time of year
any diabetic specialist will tell you it only matters what you do eat 99% of the time and that having a day off on christmas day isnt going to harm
so serve them some christmas pud or mince pies
if they are insulin controled and they are on the 2 different kinds of insulin then they can simply do a few more units of the quick acting insulin that they inject with their meals to compensate for the festive dessert
just tell them to remember that one unit lowers their blood sugar by 3mmol/litre
if they take tablets then it is more tricky because they cant take more tablets but they can still have a day off once a year

White or chocolate mousse
Raspberry sorbet (use frozen raspberries)
Individual layered jello molds (sugar free jello)

can do pretty much anything. If you are using a recipe for them just substitute the sugar with sweetners!! Put less in as sweetners are lighter than normal sugar! Maybe you can make a chocolate log with sweetners instead of sugar!! Christmas pudding you can make with sweetners but has tons of natural sugars so would be a little unsuitable. If you have an ice cream maker you can make sugar free ice cream! You can do something similar to what the others are having just with a little substitution.
Guve it a try. If they don't like it you can still offer fruit salad as an alternative on the day!

I can't remember the brand name of it, but there is a cheesecake that is made for diabetics and it is really good. My second husband was a diabetic and I've tried this cheesecake.
