The liver from geese that have been held down and force fed. Anyone with the slightest respect for animals or birds wouldn't go near it.

It is the fattened liver of a goose or duck and it is usually obtained by overfeeding the birds to the extent that the liver overdevelops. It is not a pate! Genuine foie gras is either cooked whole and then preserved under vacuum in its own fat and served cold with a good Sauternes or it can be cooked fresh in a hot pan in a little goose fat with a dash of sheery vinegar and served hot.

Fatty Goose Liver, essentially "Diseased Liver from a very ill goose". Do not buy, do not eat, do not perpetuate the horribly cruel treatment and conditions these helpless animals endure. I understand I am a meat eater, and not all conditions are good anywhere. But trying to do my part by buying organic when I can and NOT BUYING SOMETHING SUCH AS FOIE GRAS!!!! I did not buy tuna many years ago until they developed a way to catch them and keep the dolphin safe. Go to the PETA website and watch them raise the geese to make foie gras and you'll be too sick to even think about it.

Foie gras is a pate from the liver of the goose. It is usually flavoured with cognac. It is a delicious pate but the way that it is made is not nice for the geese.
Their beaks are held open and corn kernels are forced into their gullet. This is done by shoving the corn into their mouth and then being pushed along the gullet from outside of the neck. It is difficult to explain without being able to show but you have to imagine your hand on the outside of the neck of the bird and forcing the corn that is on the inside of the bird down into his/her stomach.
Despite the fact that I am aware of this, I have still eaten foie gras and have enjoyed it.
I am sure that there must be a better way to make it, but I don't know how.

Goose or duck livers that have been ground up and seasoned and made into th epate we call pate de foi gras. Animal rights activists are against this because the geese and ducks are force fed to engorge and them and enlarge their livers to make the pate.

'Fatty liver' in French. It's duck or goose liver paté. The ducks or geese are overfed to make their livers enlarged. All animal rights groups consider it to be extremely cruel because of the force-feeding and health issues, and foie gras is even banned in some countries.

foie gras (n) 'fwaa 'graa
A pâté made from goose liver (marinated in Cognac) and truffles
here's a recipe:
Eggs With Foie Gras Pate and Cream
1/2 lb pate foie gras, cut into 4 pieces
4 large eggs
4 tablespoons heavy cream
4 teaspoons truffle oil
2 teaspoons tarragon
2 teaspoons parsley
Lightly butter four 4-ounce ramekins or egg coddlers. Cut each piece of fois gras pate into 4 cubes. Divide cubes among prepared dishes.
Crack 1 egg into each dish, keeping yolks whole. Sprinkle with salt and pepper. Drizzle 1 tablespoon cream over each egg.
Sprinkle each with 1/2 tsp tarragon and parsley.
Cover each dish tightly with foil.
Fill large skillet with water to depth of 1/2 inch. Bring to simmer over medium heat. Add ramekins.
Cook until egg whites are firm and yolks are still runny, about 8 minutes. Remove ramekins from water; remove foil and wipe ramekins dry.
Drizzle 1 teaspoon of truffle oil on each egg. Serve with buttered toast.

goose/ducks that are force fed by having grain stuffed down their gullets untill their liver becomes distended then they are slaughtered and their livers turned into pate.not very pleasant for the animals but quite a lot of people like the taste
