My experience tells me that if I marinated the chicken with honey or I brushed honey on the chicken too early, it burns easily, so I brush honey on the chicken when it is almost done, then roast another 8 to 10 minutes.
If I want my roast chicken tasted "more honey", I would prepare a ginger honey sauce for dipping.

20 g fresh ginger, chopped finely
1 small onion, chopped finely
2 gloves of garlic, crushed
2 tablespoon light soy sauce
a pinch of salt
1 tablespoon of white wine or dry sherry
1 tablespoon rice vinegar (or balsamic vinegar)
4 tablespoon honey
2 teaspoon corn starch
3 tablespoon chicken stock
2 tablespoon cooking oil
1) Mix honey, wine, chicken stock, salt, soy sauce and cornstarch in a bowl, combine well and adjust taste, set aside
2) heat frying pan with oil over low heat, stir fry garlic and onion for 3 minutes, add ginger and stir fry quickly, add honey mixture and stir till sauce is thick enough
3) Serve roast chicken with sauce

Ingredients:
20-25 boneless, skinless chicken thighs
1/4 cup maple syrup
1/4 cup hot water
3 (or more) crushed garlic cloves
2 tbsp honey
2 tbsp balsamic vinegar
2 tbsp light soy sauce
1. Mix together maple syrup, hot water, garlic, honey, vinegar and soy sauce
2. Place chicken in roasting pan, then pour mixture over
3. Bake in 325 degree oven for one hour
OR
Place all ingredients in a crock pot and cook 3 to 5 hours on high or 7 hours on low or until done.

What I would do is, pound up a clove fresh garlic with some salt and black peper. when its like a paste add in 1 tbsp of cooking wine, rub half of it over the chicken and let it rest in the marinate for 1 hour.
Mix the remainder half with honey (about 2 tbsp for a 1kg bird) and rub it over the chicken again and let it marinate for another 1 hour.
Put the chicken in the oven to bake. Any remainding marinate on the tray or bowl, use it to brush over the chicken in between baking time. Keep the chicken moist.
When its done, sprinkle herbs and garlic powder for extra flavour.

Honey about half a cup or more depending on the amount of chicken you use and either mix in one half teaspoon garlic powder or chop up two or more garlic cloves (to your taste) add salt pepper and maybe a dash of soy sauce
Marinate the chicken for a few hours and cook

INGREDIENTS:
3 pounds chicken wings
Salt and pepper, to taste
1 cup honey
1/2 cup soy sauce
2 tbsp. vegetable oil
2 tbsp. ketchup
1 garlic clove, minced
PREPARATION:
Cut off and discard chicken wing tips. Cut each wing into 2 parts and sprinkle with salt and pepper. Combine remaining ingredients and mix well. Place wings in slow cooker and pour sauce over. Cook 6 to 7 hours on low.
