Sweetie, that cannot be ascertained with any accuracy.

Please consider that Australia was founded as a group of free states that accepted transport of convicted criminals from England. The earliest recorded exploration of Australia by Europeans was in1606 by the Dutch navigator Willem Janszoon. This was followed up by expeditions from all the seafaring European coountries of that era over the next hundred years. In 1770, the expedition of the Endeavour under command of British Royal Navy Lieutenant James Cook navigated and charted the east coast of Australia, making first landfall at Botany Bay on April 29, 1770. In the early 1800's the first colonies were founded.

Now, consider that nowhere in the history accounts that I am familiar with is there mention of a major Italian expedition. In all likelyhood Italian sailors or other Italian nationals could well have been in both the crews of the other expeditions and in convict shipments.

So my theory is that Italian cousine was probably introduced in Australia as early as the very first expeditions by way of incidental Italian seamen or convicted prisoners. As these people came over to Australia they undoubtedly brought their recipes with them. Therefore I believe that Italian as well as all major European cuisines were introduced to the new land at about the same time, through natural migration. There is no definite date or person to attribute this to, just natural culture spread...the melting pot.

I hope that helps.
