Peppery stews are common in the southern states, while menus of grain and beef are common in the north. Much of the Nigerian food is grain-based. Tuwo, made from maize, corn rice or millet, is popular, as is Efo, a vegetable soup, and Isi-ewu, goat head pepper soup. Along the coast, a variety of seafood dishes can be found. Palm oil, a reddish colored oil made from ground palm kernels, is the main type of oil used in cooking. Snack foods include fried yam chips, meat pastries, and fried plantains.

The favorite drink in Nigeria, particularly in the south, is palm wine, a natural juice made from palm trees.

They use seafood, chicken, some beef and local vegetables such as an african variety of okra, tomatoes, peppers both hot and sweet, onions, peas (they have a variety of black pea), a vegetable called gname (it's a tuber, similar in size to a long potato, I'm not sure how it is spelled it could be nyame), rice, millet seed instead of wheat is also often used in african cooking.
Palm oil, peanuts, coconut, sweet potatoes. And many local varieties of fruit.. Plantain (cooking bananas)
