Sopita
Ingredients (use vegan versions):
1 to 2 cups uncooked small shells or elbow macaroni
half an onion, chopped
1 tablespoon oil (use as needed)
2 vegetable boulion cubes
small can tomato sauce
chopped fresh cilantro(**)
corn, zuchini, tofu (optional)
water
Directions:
A yummy soup that's easy to make, very cheap, and soooo good! Its become a staple in my weekly meals, as well as with the friends I've shared it with.
In a sauce pan or small soup pot sautee the onion and pasta in as much oil as needed, the less the better, until the pasta edges begin to brown. Stir constantly. I'm not quite sure why one does this but this is how I was taught to do it.
Add tomato sauce and enough water so that the soup is not too watery and still red, about 3 cups. After trying this a few times you can judge it on how thick you like the soup, I do it by the number of people who are eating with me, a little less than one soup bowl full of water for each.
Add the boulion cubes, sprinkle in some salt, pepper and garlic powder, letting it all cook until pasta is done, about 10 minutes. Add the cilantro at the last minute(**).
The original recipe I was given has a last step of grating cheese right into the soup pot, which is delicious, especially with pasta shells as they create little pockets where the melted cheese is collected. Use vegan cheese if adding this step.
For more veggies and some variety I sometimes throw in corn, zuchini,or small tofu cubes letting it cook when the pasta has just a few more minutes to go.
**Fresh cilantro is essential for this recipe! I was having a hard time using up the huge bunch before it went bad though and then dicovered a new method passed on by a friend. Chop the cilantro up, store in a ziplock bag in the freezer and then take it as needed straight from the freezer. It still tastes fresh,really!

First I take 3 fresh tomatoes,A piece of garlic,and a 1/4 of an onion and water blend in a blender to make like a juice. Set to the side, I then fry my pasta in a little bit of oil (Less oil is better) just until pasta is getting a little brown. I then add my tomato juice from the blender. Add more water due to the pasta boiling so u will have soup. Add one chicken Boulion cube and some salt to liking.
This is how I learned to make it from my mother in law she is mexican.) I add whole jalepenos while soup is boiling and cut up potatoes.
My husband and kids like to add banana when they get their bowl of soup. Sounds gross I know but really is not that bad. Hope this helps.

UMMMMMM...SOPA DE FIDEO, OR ANY KIND OF PASTA IS THE BEST! IT IS SO EASY TO PREPARE AND IS REALLY KID-FRIENDLY!
1. assemble the ingredients: two small roma tomatoes diced, 1/2 glove garlic, 1/4 small onion diced, handful of cilantro, no stems, 1 1/2 tbsp of Knorr chicken consomme (chick boullion) and 1 tspn salt (or to taste), 1 small bag of angel hair pasta or whatever kind you want...., and about 1tbsp of oil
2. in a small saucepan, heat the oil on medium heat and gently saute the garlic and onion until brown and fragrant. remove witha a slotted spoon to a paper towel so that the excess oil will drip off. take the pan off the heat.
3. add the diced tomatoes to the onion and garlic, in the blender and add about 1-2 tablespoons of water to allow it to puree well. when pureed with no large chunks...stop.
4. put the pan back on the heat, on medium high, add the fideos and salt and allow the fideos to fry to a golden brown....stir constantly so it will not burn...
5. add the tomato puree to the fideos...it should sizzle...
6. keep stirring while you add the consomme....when it thickens down....add 2 cups of water...let it come to a boil and then add the cilantro
7. cover and put the heat down to low.....let it sit and the noodles soak up the delicious tomatoey-chickeny broth...when the noodles are opaque and soft, NOT AL-DENTE, enjoy
sopa de fideo tastes really good when you add a couple of drops of lime juice....from a fresh lime....never the plastic bottle crap....
if you want a more reddish color....you can add a tablespoon of tomato paste or sauce.....but not too much as you want the chicken flavor to come thru....plus the paste tastes 'fake'....the naturalness of the fresh tomatos is the best part....

I have a much easier version. I just fry whatever kind of "pasta" or "macaroni", whatever you want to call it, with a teaspoon of oil and a clove of garlic cut in half, until it browns. Then I add bouillon, boiling water and a can of tomato sauce. Easy!

In the superstore, fruits are usually selected much too soon. Some are rocks, many are wrong. Some of the fruit and vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
