Veggy Pakora

1 cup (4 oz, 110 g) gram flour
1 tsp. mixed ground spices (for example, coriander, cumin, turmeric, ginger, curry powder or garam masala)
About 1 lb (450 g) of vegetables, cut into very small pieces (for carrots, celery, bell pepper and parsnips, prepare thin slices; for cauliflower and broccoli, cut into small florets)
Oil or ghee for frying

Mix the flour and spices. Slowly add cold water, stirring all the time, until you have a thin batter.

Heat the oil or ghee in a skillet. Dip each vegetable piece in the batter, one at a time. Make sure that it is fully coated. Drop it into the hot oil, and cook for a few minutes until crisp.

Remove the vegetable from the skillet and drain on a paper towel. Keep it warm until you are ready to serve.

Bread Pakora recipe


Ingredients:
Bread slices 12
Gram flour 2 cups
Boiled potato 2
Chopped mint leave 1 tbsp
Mango powder 1/2 tsp.
Red chilli powder 1 tsp
Black pepper powder 1/4 tsp
Roasted cumin powder 1/4 tsp.
Salt 1 tsp
Vegetable oil for deep frying

Method:
Mash the boiled potato.Prepare the stuffing by mixing mashed potatoes,
chopped mint leaves, cumin powder, mango powder and black pepper powder.
Cut bread slices into two pieces.
Make a batter by mixing gram flour, red chilli powder and salt and water beat it thoroughly. It should be of medium consistancy.
Divide the potato stuffing into 12 parts. Stuff each part between the two bread halves. Now coat it in the gram flour batter. Deep fry bread pakoras in hot oil until golden brown. Repeat the steps for remaining bread slices.
Serve hot with chutney or tomato sauce.

Pakoras - Vegetable Pakora

Ingredients
2 cups of vegetables, cut into large pieces
(You can use green bell pepper, cauliflower, onions, etc)
1 cup besan(bengal gram flour)
1/4 cup water
2 tsp red chilli powder
1 tsp cumin seeds
A pinch of hing(asoefetida)
Salt to taste
Oil for deep frying

Method
Made a thick batter with the water, flour, red chilli
powder, cumin, hing and salt.
Coat each vegetable piece with this batter and deep fry.
Serve with tomato ketchup.

Pakora


2 teaspoons cumin powder
2 teaspoons coriander
1 teaspoon chili
1 teaspoon curry powder
2 teaspoons garlic
1 chopped onion
1 small chopped potato
8 ounces flour
salt
pepper
1 teaspoon ginger powder
1 tablespoon tomato ketchup
1 tablespoon chopped chives
mix all together with enogh water to make a thick batter.
if you like it hot use more chilli or hot chilli sauce.
heat oil in a wok and place spoonfuls of the mixture until puffed up and crispy.
turn over if the oil is shallow.
this mixture can be played with to suit your tastes.

Take a cup of besan and add 2tbsps of rice flour to it. Mix it thoroughly and add 2tsps of crushed garlic and ajawain to it. Make a batter with water ( not too thick and not too watery either) Add salt, red chilli powder and a tbsp of oil to it. Cover and let it stand while you prepare the vegetables. Slice potatoes with a peeler that peels thickly ( or use a knife to slice potatoes of the thickness of a chappati) and slice some onions into rings. Slip the potatoes into salted water.
Heat the oil and let become really hot but not smoking and then turn the heat to low. first drain the water from the potatoes and dip them into the batter and fry taking care not to overcrowd the pan. Let them fry on both sides but do not let them turn golden. take them out and place on a paper towel. Now fry the onions till golden brown. After frying the onions refry the potatoes till golden brown. Sprinkle some chaat masala on them and serve them immediately with fresh corinader chutney
