On the menu I have for a starter empanadas, followed by pork roast, and rice and beans. I guess I could use some idea of a vegetable as well. Any good idea's out there? What have you got for me?

Sounds good, but you need something lighter and greener on the table too. Put out a salad of some kind for balance. And flan is always a good desert for this kind of meal.

SPANISH FLAN (CUSTARD DESSERT) 2 c. sugar 2 (13 oz.) cans evaporated milk 4 (8 oz.) pkgs. Philadelphia cream cheese 2 c. sugar 8 eggs 2 tbsp. vanilla In the middle of the oven, put a pan with 1" of water. Turn the oven to 350 degrees. Put 2 cups sugar in a tube pan and caramelize over high heat on stove top. Mix the remainder of the ingredients in an electric blender. Put the mix in the tube pan. Place the tube pan in the pan with the hot water in the oven. Bake for 1 hour. Introduce a toothpick and if it comes out clean it is done. Take it out of the oven and let cool. Cover and put in the refrigerator. When cold, flip upside down onto a plate, slice and serve.

make sure you have lots of limes.
order flan
take corn totillas slice in to fours fry them then did in to cin and sugar and serve with a friut dip
