Buy some nice fresh peaches and a packet of "Cobbler Mix" from Morrisons. Cut the fruits in half, remove stones, place down in a large dish. Make a cobbler mix and use as directed on the packet (like put it over the peaches). Don't spread the mix out, just dollop it on - that's how the dish gets its name - it looks like cobble stones in a dish.

Well, it's not a pie, and it's not a pudding. In fact, some people differ significantly on just what a cobbler should be.
QUICK AND EASY PEACH COBBLER
1 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1 stick butter
3/4 to 1 c. milk
1 lg. can sliced peaches
1 tsp. cinnamon (optional)
3 tbsp. sugar (optional)
Melt butter in a 2 quart casserole dish in 375 degree oven while combining flour, sugar, and baking powder. Add milk to the dry ingredients and stir until blended. (Method 1) : Pour the batter into the melted butter; dribble peach juice into the mixture and add peaches. Sprinkle top with cinnamon and sugar. Bake 30 to 40 minutes at 375 degrees. (Method 2) : Arrange peaches and juice in melted butter. Drizzle batter back and forth over fruit. Bake 30 to 45 minutes or until golden brown.

Recipe For Peach Cobber:
Ingredients:
1.2 kilos of ripe yellow peaches, peeled, pitted, and sliced into 2cm thick wedges (about 12 cups)
2/3 cup sugar
1/2 cup quick cooking tapioca
1 1/2 teaspoons grated lemon peel
1 1/2 tablespoons lemon juice
1 1/2 teaspoons vanilla
2 cups all purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon ground nutmeg
2/3 cup (about 6 oz) butter, cut into 1/2 inch chunks
2/3 cup whipping cream
Method:
1 In a large bowl, mix peaches, 2/3 cup sugar, and the tapioca, lemon peel, lemon juice, and vanilla. Let stand at least 15 minutes or up to 30 minutes to soften the tapioca, stirring several times.
2 In another bowl, combine flour with remaining 1/3 cup sugar, the baking powder, and nutmeg. With a pastry blender or your fingers, incorporate butter into flour mixture until mixture resembles coarse crumbs. Add cream and stir just until dough holds together.
3 In a buttered shallow 2 1/2 to 3 quart baking dish, spread fruit level. Using your hands, crumble dough evenly over fruit.
4 Bake in 350°F oven until fruit mixture bubbles in center and topping is golden brown, 50-60 minutes.
Delicious with vanilla icecream or whipped cream

Sweeten peaches to taste, with a bit of cinnamon. Next, mix in some liquid, and put the first layer in a heat proof dish. A knob of butter in chuncks, sprinkled about.
lay on a layer of regular scones dough. poke holes or make in strips. Doesn't have to be pretty.
Second layer of peaches and butter
Top layer as rolled out for scones, or in chunks or dollops if you want to do a drop dough (simply add more liquid to the batter. If solid, poke holes in top.
Bring to near boil on cooker top for about five minutes or so to get inner dough started cooking, the pop in oven like for a pie.
That was my Gran's way.
Some people only use the top crust, and put directly in the oven. Technically a cobbler is a pie with no bottom crust.

Peach Cobbler is a simple fruit dessert that is fruit on the bottom & a sweet biscuit dough on top (Cobbler is not limited to just peaches, you can use nearly any fruit). Take a square baking dish, grease it with butter or cooking spray, line the pan with enough peaches (canned or fresh, pitted, sugared) to fill about halfway to 3/4 of the pan, drop a couple of pats of butter on top of the peaches, sprinkle with sugar & your favorite fruit spice(cinnamon, pumpkin pie spice, or allspice), make a drop biscuit dough that has sugar & spice(favorite fruit spice) added, put dough on top of peaches & bake in 350-400 degree oven til top is golden brown & peaches are bubbling. Serve plain or with ice cream.

Put some peach halves into an all metal frying pan, sprinkle with brown sugar and some mixed spice then put some puff pastry on top of that. Place in a hot oven for about 20mins. Then remove from the oven, sprinkle more brown sugar over the top and place under a hot grill until sugar has melted.
