Christmas Salad Recipe:
Ingredients :
mixed red and green lettuce leaves
2 sweet pink grapefruit
1 large or 2 small avocados, peeled, stoned and cubed
Dressing
90ml light olive oil
30ml red wine vinegar
1 garlic clove, crushed
5ml Dijon mustard
salt and freshly ground black pepper
For the Caramelized Orange Peel
4 oranges
50g caster sugar
60ml cold water
Method :
To make the caramelized peel, using a vegetable peeler, remove the rind from the oranges in thin strips and reserve the fruit.
Scrape away the white pith from the underside of the rind with a sharp knife, and then cut the rind into fine shreds.
Put the sugar and water in a small pan and heat gently until the sugar has dissolved.
Then add the shreds of orange rind and boil for 5 minutes until the rind is tender.
Using two forks, remove the orange rind from the syrup and spread it out on a wire rack to dry.
This can be done the day before.
Reserve the syrup to add to the dressing.
Tear the lettuce into bite size pieces.
Peel the grapefruit and remove the pith from them and the oranges.
Holding the fruit over a bowl to catch any juice, cut them into segments, removing all the pith.
Put all the dressing ingredients into a screw top jar and shake vigorously.
Add the reserved orange flavored syrup and adjust the seasoning to taste.
Arrange all the salad ingredients on individual plates, spoon over the dressing and scatter on the caramelized orange peel.
Prepare this light first course ahead and assemble just before serving.
Serves 4 - 6

Roast Turkey Breast with Parsley Crust: ( main dish)
Ingredients :
60g butter
4 spring onions (scallions), finely chopped
2 garlic cloves, crushed
2 cups fresh white breadcrumbs
2 tbsp finely chopped parsley
2lb 4oz boneless turkey breast
1 egg, lightly beaten
cranberry sauce
Method :
To make the parsley crust, melt the butter in a small frying pan over medium heat. Add the spring onion and garlic and stir until softened. Add the breadcrumbs and parsley and stir until combined. Cool. Preheat the oven to 180C (350F/ Gas 4). Place the turkey in a large, deep baking dish and pat the turkey dry with paper towels. Brush with egg. Press the parsley crust firmly onto the turkey. Bake for 45 minutes, or until the crust is lightly golden. Serve sliced with your favorite accompaniment.
Note: Turkey can be bought as a boneless breast with the skin on, which makes it very easy to carve. It is sometimes called a turkey breast supreme and it is available from chicken shops and some supermarkets. The parsley crust can be made up to a day in advance.

Cranberry Relish Recipe:
Method :
Put 4 cups fresh or frozen cranberries, 1/2 cup sugar, 1/2 cup fresh or bottled orange juice, the rind of 1 orange, 1 cinnamon stick and 2 tbsp of port in a heavy-based saucepan.
Bring the mixture to the boil, then reduce the heat and simmer for 5 minutes.
Remove the orange rind and cinnamon stick, making sure you remove any small pieces that have broken away from the stick, and cool before serving.
Store, covered, in the refrigerator for up to a week.
Traditionally served with roast turkey.
Makes 2 cups (500ml)

Caramelized Button Onions and Carrots:
(side dish)
Ingredients :
675g carrots, trimmed, scraped and cut into thin rings
225g button onions, peeled
40g butter
90ml chicken stock
15ml sugar
salt and freshly ground black pepper
Method :
Put the sliced carrots and peeled onions in a saucepan, cover with salted water and bring to the boil over a high heat.
Boil for 1 minute, then drain.
Return the vegetables to the pan, add the butter, chicken stock and sugar and bring to the boil over a moderate heat, stirring occasionally.
Cover the pan and simmer over a low heat for about 10 minutes until the vegetables have absorbed all the liquid and are glossy and dry.
Season with salt and pepper to taste and transfer to a warm serving dish.
Cover with foil and keep warm until ready to serve.
The flavor of the vegetables is enhanced by this cooking method.

Sauteed Herbed Potatoes:(side dish)
Ingredients :
750g baby new potatoes
30g butter
2 tbsp olive oil
1/2 tsp cracked black pepper
2 garlic cloves, crushed
1 tbsp finely chopped rosemary
1 tsp rock salt
Method :
Wash the potatoes, pat dry with paper towels and cut in half. Boil or steam until just tender. Drain. Heat the butter and oil in a large heavy-based frying pan. When the mixture is foaming, add the potatoes and season with a little black pepper. Cook the potatoes over medium heat for 10 minutes, or until golden and crisp, tossing regularly so that they brown evenly. Stir in the garlic, rosemary and rock salt. Cook for 1 minute, or until the potatoes are well coated. Add more black pepper and mix well. Serve hot.
Note : Chopped thyme or parsley would also work nicely in this recipe instead of the rosemary.
Serves 4-6

Ect? It's ETC. Ideals? It's IDEAS. Christmas is a proper noun, and should be capitalized. On the eve I make Frutta di Mare, fish cakes and spaghetti with marinara, this year a ham, mashed potatoes with mozzarella casserole, stuffed artichokes, broccoli with lemon, mushroom gravy, and homemade applesauce. Dessert will be pumpkin and apple pie with ice cream with coffee. On the Day we'll have appetizers put out in trays all over, like homemade chicken salad with crackers, assorted hors d'oeuvres, crudites', nova salmon and crackers, olives, cheeses and sliced pepperoni, lasagna for the first course. Prime rib, roasted root vegetables (potatoes, parsnips, carrots, pearl onions, and brussels sprouts.) Homemade challah bread, and au jus gravy. Dessert will be miniature pastries, with espresso. Chestnuts, fennel, and mixed nuts also will be on the table.

corn casserole=can sweet mexicorn, can creamstyle corn, 1/2 pkg of shredded cheese, 1/2 pkg cream cheese, tab butter, 1/4 cup green pepper and onion sauteed in butter, tea garlic powder. stir together. cook in oven for 45 minutes. I got this out of Kraft food magazine. I guess you can look at kraft.com, also sign up for free newsletters and magazines.
