Dont put anything in the baking dish.
Use a roasting pan, so the fat dripping can drip down. You could line the bottom of the roasting pan with aluminum foil-so you don't have a big mess to deal with.
Use a rub on the outside of the lanb.
I like this one.
Fresh minced oregano. (1/2 Bunch)
Fresh minced mint (1/2 Bunch)
Minced garlic
Red wine-preferably the one you will be serving with dinner. 1/4 cup
Salt and Pepper.-
Add a little bit of canola or vegatable oil-about 1 tbs.

This should be similiar to a dry rub which is wet (I know-oxy moron)

If you have a mini chopper or a food processer-you can mince your herbs in that

Rub over your meat and follow the cooking time inx based on the weight of your lamb.

Oh yeah-cooking times-for medium rare 145 degrees.
Per lb at 325 degrees 15 to 20 minutes.
Cover with aluminum foil when you cook for the first part when you are 30 minutes out-remove aluminum foil to carmalize the outside of the meat.
