Schab Wieprzowy po Polsku
(Roast Prok With Caraway)
Another simple yet satisfying Polish dish. Very easy.
2 kg loin of pork
2 tsp salt
1/4 tsp dried majoram
1 tsp caraway seeds
50g butter
Preheat oven to 220C/425F. Score the fat of the pork with a knife and rub with salt, majoram and caraway seeds over the meat. In a large pan, melt the butter over high heat and seal the meat rapidly. When the pork is brown all over, place into a roasting dish and roast for 2 1/2 hours, basting frequently. Serves 6.
Kopytka
(Little Hoofs)
A good accompaniment to any meat dish.
5 potatoes, cooked and mashed
1 egg
flour
Mix the potatoes with the egg and add flour until you have a loose dough that does not stick to your fingers. Roll out the dough on a floured board and cut into thin noodle strips. Bring some salted water to boil and drop the noodles into it. They are ready when they float to the surface. Serves 6.
Zupa Koperkowa
Dill Soup
Besides sauerkraut and sour cream being the common ingredient in Polish recipes, dill also plays an important part in flavouring salad dressings, boiled potatoes, sauces and soups.
15g unsalted butter
1 tbs fresh dill, chopped
500ml beef stock
1/2 tsp lemon juice
150ml sour cream
salt and pepper
Melt butter in pan, add dill and stir gently over low heat for a few minutes. Heat stock and add the dill to it. Mix in the lemon juice and cream. Season and serve. Serves 2.

Polish and Russian have some same foods. Look up a Babka (sweet bread), and Glumkies, and Perogies, and other tasty foods. Go to a local Polish festival, they usually sell Polish cookbooks from members of the local church and additional people. Personally, I buy the foods that I can. Like Potato Perogies from the supermarket... cooked with butter in the skillet.. and served with sour cream on top is yum! It is not hard to find. Good luck, best wishes and Happy turkey day.

KNEDLE
Ingredients:
2 pounds potatoes
2 eggs
¼ teaspoon salt
flour
butter
breadcrumbs
boil peeled potatoes and leave them uncovered to the next day.
On the next day:
Mince the potatoes with a mincer
Add eggs, salt and flour and knead it.
How much the flour - here is the question.
You have to use as much flour as the potatoes will take. The dough has to be similar as a the dough for pizza, but you cannot count that it will go away from your hands. If it does it it will be to hard after boiled. The best when you think that the dough is good, make a small dumpling and boil it and then taste. If the dumpling will be too soft add more flour.
When you have a good dough , shape balls as big as big plums you have. When you have shaped all knedle , put them into salt, boil water (100 C) . When they surfaced boil them for about 5 minutes , not more. Then put them out of the water, and rinse them under water. Then melt butter and add breadcrumbs and fry it as it will be golden. Then , flow the butter on the knedle, and pour with sugar.
instead of the butter and sugar you can pour the Knedle with cream with sugar
From the same dough you can make dumplings ( we call them Kopytka);
To make them, first you make long rollers (diameter = about ¾ inch) and cut them aslant. They are good instead of potatoes with sauce , meat and vegetables. OR you can fry( after boiled) them and eat with salt or sugar

Sausages an sauerkraut - brown sausages with chopped onions in butter - take out sausages - add two tablespoons of flour and let the flour soak up all the butter.
Drain and rinse sauerkraut then put in with the onions and butter mixture - add 1 tablespoon of caraway seeds and stir around.
Then add 1 cup or chicken or beef broth and stir as it heats - it will thicken = put the sausages back in the pan and heat through
Serve hot

first get a light bulb and find some friends to turn the room around, then when the room is lit, find a pot and fill it with kielbasi and potato's, and Vassar, not the school, then..................
