For the same reason people still smoke and to other things that they know are bad for them. (yes, I know smoking is an addiction) MSG makes the food taste better, so we are willing to overlook it and take our chances. We drink milk that they say causes cancer. We wear bras, that they say causes cancer. We drink alcohol, because it's not only not beneficial, but it causes liver disease. Pick your poison. We use cell phones that they say causes brain damage or whatever it is. We have been warned... short of a police state where we are forbidding from from consuming MSG, we are merely warned of it's hazzard until the fatalities from it are large enough to cause a ban. (as in all the medication that has been removed or altered... I still miss the orginal Alka Selter) Everyone make up their mind whether to use it or consuming as in chinese food.

There is no scientific proof that MSG is bad for you but of course anything consumed in large quantity is bad for you, right? Only a small amount of MSG (less than 1/2 teaspoon) is required to flavor any dish. You can replace MSG with sugar instead if you are worried.

MSG is a great flavor enhancer. You can cook a so so dish and with the addition of MSG, it tastes great. That's why its used liberally in Oriental restaurants. Problem is, many people are allergic to it and can have light symptoms and sometimes
critical symptoms. I can't remember the exact basic chemical structure of MSG. I personally get bad headaches.

I have heard it causes cancer. I dont know, but I can tell you when I eat something with MSG, it makes me get a headache and feel yucky all over. All of my friends and family report same feelings. If a food has msg in it and I dont know. I know about an half an hour to an hour. I check the ingrediants and sure enough. I dont knowlingly touch the crap.

It's not that it's bad for the health, but people suffer from allergic reactions when they eat it.

My Dad has very severe allergies to MSG. He ends up in the hospital.

You'd be surprised what foods have MSG (or Accent) in them. Naturally, most Chinese and Asian foods, Cheetohs, Triscuits.

The big problem with MSG is that a lot of people have allergic reactions to it however it has been around many, many years as a food flavor enhancer especially in CHinese restaurants. So if you are not allergic to it there is no problem.

MSG, monosodium (meaning one salt) glutamate (from the gluten that it is derived from) is derived from the sugar beet skin, which is a by-product of sugar production......The "reaction" or "allergen" alleged to be in MSG is NOT from the MSG, but from the sugar gluten that it's derived from......People are developing more of a Celiac or Celiac Sprue reaction from wheat products, due to bioengineering of the wheat.......And no, it's not bad for you unless you're a celiac (sell-EE-ack), which means that you cannot digest any type of gluten, which is the "starch" part of any type of flour....

Some people do NOT tolerate it well. Otherwise, I really don't think there is anything wrong with it. It causes me to have trouble the next day, it makes me hard to wake up. I also know a fellow who says it makes his fingertips tingle.
