Cheesy Turkey Lasagna (2nd Prize at 2002 Utah State Fair)
(Serves 8)
I N G R E D I E N T S
1 package (10 oz) frozen chopped spinach, thawed, drained, and patted dry
3 cups cooked turkey white meat, chopped
4 cups grated Mozzarella cheese
2 cups grated Parmesan cheese
1 cup Ricotta cheese
1 cup chopped onions
1/2 tsp dried Rosemary
1 tsp dried marjoram
1 tsp garlic powder
1/2 tsp oregano
1/2 tsp black pepper
1/4 tsp salt
1 Tbs lemon juice
1 can (10 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup milk
9 lasagna noodles, cooked according to package directions
D I R E C T I O N S
Preheat oven to 350°F. Saute onions in small frypan until lightly browned. In a large bowl mix together all ingredients except noodles, and Mozzarella and Parmesan cheeses. In another bowl mix the cheeses together. Place 3 of the noodles on the bottom of a 9" x 13" baking dish. Spread 1/3 of the turkey mixture over the top, followed by 1/3 of the cheese mixture. Repeat the process two more times, ending with cheese on the top. Bake on center rack in the oven for 25-35 minutes until the lasagna is thick and bubbly.

Asparagus Turkey with Black Bean Sauce
(Serves 6)
I N G R E D I E N T S
1 tablespoon salted Chinese black beans
2 cloves garlic, minced
24 - 32 oz. cooked Norbest Turkey Breast, cut into bite sized pieces
1 tablespoon soy sauce
1 tablespoon cornstarch
4 tablespoons peanut oil, divided
4 cups fresh asparagus, trimmed into 1 1/2 inch diagonal slices pinch of salt
1 tablespoon water
1 teaspoon sugar
1 tablespoon cornstarch
1 tablespoon soy sauce
3/4 cup (scant) turkey broth
4 cups hot cooked white rice
D I R E C T I O N S
Rinse black beans in a strainer and drain. Mash with garlic in a small bowl. Place turkey in a large bowl, add black bean paste, soy sauce and cornstarch, Mix well and set aside. Heat 2 tablespoons oil in a wok or large skillet until a drop of water sizzles. Add asparagus and stir-fry for 1 minute. Add water, cover and steam for 30 seconds. Remove from pan and set aside. Combine sugar, cornstarch, soy sauce and turkey broth in a shaker jar. Shake vigorously to combine; set aside. Add 2 tablespoons oil to the wok, heat to high and add coated turkey pieces. Sear until cooked (approximately 3 minutes). Add broth mixture in a shaker jar and stir until thickened. Return asparagus to turkey in wok. Toss until heated thoroughly and serve over rice.

Baked Turkey Chilies Rellenos
(Serves 6)
I N G R E D I E N T S
4 cans (4 oz each) whole green chilies
Vegetable cooking spray
4 oz Monterey Jack cheese, cut into 1/2-inch strips
1 lb cooked Norbest turkey, cut into 1/2-inch strips
1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
3 eggs
1 cup grated cheddar cheese
D I R E C T I O N S
Drain chilies, slit on one side, remove seeds, and open flat. Arrange on baking dish, lightly coated with vegetable cooking spray. Fill each chili half with Monterey Jack cheese and turkey. Fold over edges of chilies and place seam-side down on dish. In medium bowl combine flour, baking powder, and salt. Beat eggs, add milk, and slowly add to flour mixture, beating until smooth. Pour over chilies. Bake at 450 degrees F. for 15 minutes. Remove from oven and turn off heat. Sprinkle cheddar cheese over top and return to oven 1-2 minutes until cheese is melted. Serve immediately.

Turkey soup is an excellent substitute for sandwiches.
You could also do a make shift Pot Pie. Here's how:
Mix Turkey, Potatos and vegetables together in a glass baking pan. Sprinkle with Nutmeg.
Cook uncovered for 8 to12 minutes, or until golden brown, at 300 degrees.

try this , its a new way to enjoy turkey!
Turkey Burritos: cut the turkey into bite-size chunks mix with sliced black olives, dash of chili powder, shredded cheddar cheese, some crumbled feta cheese, sour cream, chopped green onion. mix it all together thoroughly in a bowl, wrap in tortillas and microwave for about 30 seconds. (you might want to heat the turkey pieces a little before adding it to the other ingredients as it will take more cooking time to heat thru than everything else)

How about a Turkey Reuben -- turkey, sauerkraut, thousand island dressing & provolone.
I'm thinking about making Turkey won tons/potstickers with cranberry dipping sauce. Add the turrkey and cooked veggies to food processor, chop fine, fill won ton skins & steam/bake or boil.

Turkey shepherd's pie (mashed taters/yams on top)
Turkey Tettrazini
Turkey Croquettes with white sauce (mashed tators & veggies on the side)
Turkey meatballs or meat(turkey)loaf (Add some spinach, use the stuffing & bind it tog. with a beaten egg)
Turkey Tacos - soft flour tortilla, sliced avocados, shredded swiss, lettuce, diced red onions, tomatoes...
With Chili yam fries - Cut the yams in wedges, toss in olive oil, sprinkle with chili powder and bake at about 375.

"Swanson Turkey Noodle Soup Express" - Serves 4
2 (14 1/2 oz.) cans Swanson Chicken Broth
Generous dash pepper
1 medium carrot; sliced
1 rib celery; sliced
1/2 cup uncooked medium egg noodles
1 cup cubed cooked turkey
Mix broth, pepper, carrots and celery in saucepan; heat to boil. Stir in noodles and turkey. Cook over medium heat 10 minutes or until noodles are done.
"Chef's Salad" - 8 servings
6 cups mixed salad greens torn into bite-size pieces
1 cucumber; thinly sliced
1 carrot; thinly sliced
3 green onions (scallions); chopped
6 radishes; thinly sliced
1/4 lb. cooked turkey meat; cut into julienne strips
1/4 lb. cooked ham; cut into julienne strips
1/2 lb. Swiss or Cheddar cheese; cut into julienne strips
2 hard-cooked eggs; sliced
2 tomatoes; cut into wedges
Thousand Island Dressing
1) In large salad bowl, combine greens, cucumber, carrot, onions and radishes; toss gently to mix well. Arrange turkey, ham, cheese, eggs and tomatoes on greens.
2) To serve: Pour dressing over salad; toss gently to mix well. Yields 12 cups.
"Scalloped Turkey" - 8 servings
1/4 cup butter or margarine
2 ribs celery; chopped
1 large onion; chopped
1/4 cup all-purpose flour
1 tsp. salt
1/2 tsp. rubbed sage
1/4 tsp. pepper
1 (10 3/4 oz.) can condensed chicken broth
2 1/2 cups water
4 cups cubed cooked turkey or chicken
1 (8 oz.) pkg. herb-seasoned stuffing mix
1) In 3-quart saucepan over medium-high heat, in hot butter, cook celery and onion until vegetables are tender. Stir in flour, salt, sage and pepper until well blended. Stir in chicken broth and water. Over high heat, heat to boiling, stirring constantly. Remove from heat. Stir in turkey; set aside.
2) Prepare stuffing mix as label directs. Spoon 1/2 of the reserved turkey mixture into 13x9" baking dish; top with 1/2 of the stuffing mixture. Repeat layers.
3) Bake at 325* - 45 minutes or until golden.
