SUNY Purchase runs several summer youth art camps, including film, photography, visual arts, and theatre. http://www.purchase.edu/Departments/AcademicPrograms/CE/Youth/
There's also a summer program run by the dance conservatory there, but I don't know what age groups that's for and there aren't any details about it on the website yet.

I second the Interlochen bid. It's in the northern corner of Michigan, and it's definitely one of the best fine arts camps out there.
