I have all the ingredients now but i dont have vanilla extract, they say you need 2 teaspoons of vanilla extract. is it optional? what if i dont use it?

They do taste best with the vanilla, but there are a few other ways to cheat. Try adding 1 tablespoon of vanilla ice-cream ( this works well). You can also do half and half with white and brown sugar, this will give a little molasses flavor and will not require the vanilla

the extract only helps sugar cookies from being too sweet. You don't have to use vanilla extract you can use a different extract instead.
If you don't use any extract you might want to reduce the sugar a little so the sugar cookies won't be too sweet. Recipes are General Guide for cooking. Real Cooks experiment.. if something doesn't turn out they make it into something other than what they intended.. Waste Not What Not! Cooking is Fun. First follow recipes to get the hang of cooking then after that experiment. If you like spicy things you could put a little HP in your sugar cookies!
Or if you like sour lemons.. a little lemon extract or juice in your sugar cookies!

No, it will be okay, just not as tasty.
You could use like almond extract or cherry extract or one of those if you have them, It will give them a new different taste.

Vanilla is used in recipies because it is a flavor enhancer. You're cookies will test best with it, but it's okay to leave out. Sometimes I use a dark rum in it's place which also works well. Good Luck.

It'll taste more bland, but it shouldn't affect it much. If you have other extracts or flavorings, they'd probably be good in there as a replacement (almond, rum, etc.)

Vannilla extract is for flavoring. Don't worry if you don't have it.
