OATMEAL RAISIN NUT COOKIES
1 1/2 sticks butter
1 c. brown sugar (not packed)
3/4 c. granulated sugar
3 egg whites
1 tbsp. vanilla
1/2 tsp. almond extract
1 tbsp. molasses
2-3 c. raisins
1 c. oatmeal
2 c. flour
3/4 tsp. salt
3/4 tsp. baking soda
1 c. nuts, chopped (almonds or ??)
Drop by teaspoonfuls on Pam-coated cookie sheet. Bake at 350 degrees for 12 minutes.

Oatmeal Raisin Cookies
INGREDIENTS:
* 1 cup granulated sugar
* 1/2 cup shortening
* 1 egg
* 1/2 cup molasses
* 2 cups sifted flour
* 1 teaspoon salt
* 1 1/2 teaspoons baking soda
* 1 teaspoon vanilla extract
* 1 cup quick-cooking oats
* 1 to 1 1/2 cups raisins
* 1 cup chopped walnuts or pecans, optional
PREPARATION:
Cream sugar and shortening together in a large mixing bowl. Add egg and molasses; beat well. Add sifted dry ingredients and mix well. Add vanilla then stir in oatmeal and raisins. Stir in nuts, if using.
Drop from teaspoon onto greased baking sheet. Bake oatmeal raisin cookies at 375° for 10 to 12 minutes, until done.
Makes about 4 dozen oatmeal raisin cookies.

THe Quaker Oatmeal recipie on the lid. It's the best I know, just add a cup of nuts (or chocolate chips or both!)
1/2 pound (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1 cup raisins
Preparation Steps
Heat oven to 350°F. In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Please look on the inside of the Quaker oatmeal box. I've been using that recipe for years it is on the inside lid of the big round canister.Not the 1 minute brand box.I'm not sure if it is on that one.Just add pecans or what ever kind of nuts you like with them.They are the best oatmeal cookies in the world and there easy to make.
