Dripping juices from turkey - put in fridge so fat rises to the top skim off a lot of the fat -

Put 4 tablespoons skimmed fat in a frying pan and melt on high (You can saute half a fine chopped onion in here too) then put 4 tablespoons regular flour and stir around being sure to incorporate all the flour into the fat (to avoid lumps) let it get a little beige or brown (as you wish but keep stirring)

Add about 1 cup of the drippings - if you do not have enough the use chicken or turkey broth/stock - stir on high until it boils and it will be very thick

Add another two cups of drippings or stock and stir until is it all smooth. Simmer on medium heat stirring all the while until you have the desired thickness - can use some cream if you wish (heavy cream) or can cut up the giblets and put in the gravy (giblets boiled separately until tender and chopped)

If I use giblets I also like to chop boiled eggs and put in the gravy

If you want it very brown use a little Kitchen Bouquet for browning

Ingredients for Brown Gravy
2-½ tablespoons solid vegetable fat
4 tablespoons flour
1 tablespoon chopped onion
1 small tomato
2 cups vegetable broth or water
Salt to taste
Instructions
Put the fat into a frying pan, and when hot, add the flour, and stir constantly until a nice brown.
Add the chopped onion, and continue to stir for a few minutes; then the tomato and stir for about 5 minutes, or until the liquid is mostly evaporated, as this will give it a good flavor.
Add one third of the liquid, and stir until smooth and free from lumps.
Add the rest of the liquid, and let boil slowly for 10 minutes; then strain and serve.
Brown Cream Gravy
Cook down 1/2 cup sour cream, stirring constantly, until the oil and the albumen separate and the albumen turns a light brown color.
Then add enough brown flour to take up the oil thus made.
Add potato water or vegetable broth, and finish the same as the preceding .
Country Gravy
Use the same proportions of flour and fat as in either of the two preceding ; omit the onion, and use milk in the place of vegetable broth or water.

i can't believe some of these answers. if you really want to know and i think you do . this is my way .Take the drippings from the pan if you have any add a little water not much because you don't want to lose the flavor and in a small container put cornstarch 1-2 reg spoons i use a spoon that i would use to stir a cup of coffee then add a little water to make a thin paste pour your thin paste into the simmering drippings wisk until thick . now you have infamous gravy to go with your infamous mashed potatoes.good luck

Simple. I take the pan I cooked the turkey in, scoop out any bits of dressing, skin or anything left in the pan. Dice up some of the meat left in the bottom and leave it it there. Start heating the pan. I have a 4 cup measuring cup which I fill with water, add 3-4 tbls. of flour, mix well with a whisk and pour it in. If I need more gravy I add more mix. Stir constantly, scraping the sides and the bottom of the pan, which helps clean the pan, It will start to boil, kepp stirring until it's as thick as you want it. I also add some salt and pepper while it cooks, use your own judgement on that. easy to do and it cleans the pan while your at it.

Rachael Ray's "Gravy" - 3 cups

Chicken broth
2 tbsp. butter
2 tbsp. all-purpose flour
1 tsp. dry poultry seasoning
1/2 tsp. pepper

Skim fat from drippings; combine with enough broth to measure 3 cups. In small pot over low heat, melt butter; whisk in flour. Cook, stirring, until just starting to brown, 1 minute. Gradually whisk in drippings, seasoning and pepper; bring to a boil. Simmer until thickened, 2 minutes.


"Herb Turkey Gravy" - 4 1/2 cups

In 1/4 cup turkey fat drippings in roasting pan, saute 1 cup chopped onion and 1 cup sliced mushrooms 5 minutes. Stir in 3 1/2 cups turkey or chicken broth, 1 tbsp. chopped parsley, 1/4 tsp. salt and 1/4 tsp. dried thyme leaves. Remove from heat.
Mix 1/4 cup Argo or Kingsford's Corn Starch and 1/2 cup cool broth until smooth; stir into pan. Stirring constantly, bring to boil over medium heat; boil 1 minute.

A good basic method to have is the basic rue, its the start of many sauces including an incredible gravy.

You need to have some flour, butter or margarine or oil, and drippings or milk (for a white sauce) or broth (beef or chicken or whatever)

Start by measuring how much broth you have you will need 1 tablespoon of flour for each cup of liquid you have. I will proceed as though you have 2 cups of broth.

using a medium sauce pan melt 2 tablespoons of butter or margarine over medium heat. Whisk in 2 tablespoons of flour, cook briefly (about 1-2 minutes for white rue, until browned for a brown rue).

add your liquid slowly whisking the entire time untill all the liquid is added, continue to whisk until mixture thickens and starts to bubble. Use a clean spoon to taste it, season to taste.

Serve and enjoy!!

I alwys use the juices from the turkey + chicken stock + a dash of baileys + thicken and serve
