You need a climate that will give you huge variances (interm of temperature) within day & night. during day time you needs to have a hot sun. Night time you need a very low temperature. a crud load of barrels to keep the wine aging in. (the longer the aging the better the wine is what i've heard.)

a lawyer, just in case you get sued for something wine-related.
