Because if soil was above, gravity would bring it crashing on to your head. Of course, for many societies, the afterlife was lived in the underworld.

It's a common psychological thing. When we're happy, or 'up' rather we tend to feel higher.... (above it all nothing can bother us etc.) hence being closer to heaven and when we're feeling depressed, we feel down...or closer to hell.
It makes sense to people, but it's all just stuff based on common sense and psych 101.
