If you live in a large city you can get fresh beans. If not and you are not in a hurry dried beans are best. Separate the good looking beans from stones and bad looking beans. Then soak overnight in a pan of water in the fridge. Drain and add fresh water. Then you can add things you like like peppers, celery, and onion or not, Ham Hocks or Smoked Turkey or not. Salt and Pepper or just pepper. Bring it to a boil for 10 minutes and then lower the heat and simmer to the consistency you prefer. I know you didn't ask for a recipe. Beans are so healthy and don't require slaughter, and are so versatile. Add some chili powder and make Chili. Be good to your heart, they are heart healthy. Canned beans are not as great as beans cooked up to 4 hours remember to stir so they don't scorch, but they will do in a pinch. And also they are a great source of protein, low in calories and cheap. Remember with dried beans separate out the stones. I don't think there are any differences in nutrients. Dried beans can be kept for six months so I would have to say dried beans are BEST.

Using the dried variety is the most tasty but lots more time consuming as they need to be soaked overnight. This also makes them easier on your tummy with less gas. The tinned ones are great for a quick option, choose a quality brand and rinse them under some clear water before using them. You can get fresh beans, they are in the frozen foods section, but usually not the varieties you are looking for. The beans dont freeze well.

I use both, depending on their use. Dried beans are great in the crockpot after a quick-soak. Or even for refried beans. Canned beans go into salads and a quick night meal. They all have their places.

I always think that dried beans are fresher than beans in a can. You never know what has ben in the can or how old the canned beans are.

I personally like making mine fresh, but if I have to buy them, as in, I am lazy, and want to make chili in a hurry, I'll buy the canned beans, kidney, especially, and I'll look at the ingredients. The less preservatives they have, the fresher the taste. Make sure that they are plain, no mixtures though.
