I have alot of juice from the turkey . What do I do now!

Quick and Easy Turkey Gravy
Makes 2 cups

Ingredients:

2 tablespoons fat from turkey pan
2 tablespoons unsalted butter
3 tablespoons flour
salt and pepper to taste
2 cups home made turkey stock or canned chicken stock
Preparation:

Remove turkey from the roasting pan and pour off all but 2 tablespoons of fat. Add the butter and melt, scrapping all the browned bits, pieces and drippings and mix together.

Stir in the flour and blend in over medium heat until lightly browned, about 3 minutes. Add salt and pepper to taste.

Slowly pour the stock into the pan stirring constantly, until smooth and simmer for approximately 10 minutes.

Take the turkey broth and bring to an easy boil. Mix 3 tablespoonsful corn starch in 1/4 cup cold water and stir until it dissolves. DO NOT USE WARM OR HOT WATER or you'll have cement. Stir into the boiling broth gently and slowly. I don't know how much broth you're using so if this doesn't thicken it to gravy just put more corn starch in cold water and add gradually till you get the thickness you want. Adjust seasonings. YUM!! Take 4 tablespoons of butter and melt it. Add 4 tablespoons of flour and cook and stir until the flour lightly browns. Add 2 cups of the juice (not the fat -- spoon off as much fat as you can) all at once and keep stirring and cooking until smooth and thick.

You can also use the fat that you spoon off of the juice instead of butter.
