If you're out of baking powder, use 3/4 of the amount needed baking soda and 1/4 of the amount needed cream of tartar together to make baking powder. My father, a skilled baker, taught me this trick. Be careful and catious though because you don't want to much of either, just the right amount or as close as you can get.

Baking powder substitute

For 1 teaspoon, use: 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar; or 1/4 teaspoon baking soda plus 1/2 cup buttermilk, sour cream or yogurt (to replace 1/2 cup liquid called for in recipe).
