I love salads and often make them as a meal. I start with lettuce, onions and tomatoes (alternating types for variety). Then I may add capers, dried cranberries, cucumbers, artichoke hearts, fresh herbs, hearts of palm, mushrooms, shredded cheese. Sometimes I add grilled chicken or fish for protein. A new dressing I concocted lately was Marie's Parmesan ranch mixed with balsamic vinaigrette (made with balsamic vinegar, olive oil and Hidden Valley Ranch Italian spices.)
For veggies, I like to steam them until tender, not soggy and add fresh lemon juice, salt and pepper.

Like you, there are many fruits and veggies I dont like, either because of texture or taste and my Doctors advice was > Eat lots of what you do like and enjoy them. Eating should be a pleasant experience and as an example, I find eating 2 tomatoes more enjoyable than a tomato and a plum (yukk) and get the same benefits! There are no health benefits to eating lots of different vegetables. It's quantity not variety that matters. Try to have a mixture of root, leaf and legumes(peas, beans etc) as well as the fruits you do like and try eating them in different ways. I don't like cooked cabbage for example but I do like it raw which is healthier anyway. Make a salad from your favourites and serve alongside your main meal! Green bean cassarole is really good! I am goinjg to type the recipe up on here. It is a must have at our thanksgivings and christmas.
GREEN BEAN CASSAROLE
prep time:5 min Cook time:35 min.
You need, 3/4 cup milk,
1/8 tsp. pepper (optional),
1family size can of Cambells cream of mushroom soup,
4 (14.5 oz) cans cut green beans drained..
1 1/3 cups FRENCHS Original French fried onions.
COOKING INSTRUCTIONS
1. in 13 x 9 pan, mix all ingredients except 2/3 cup french fried onions.
2. bake 30 min. at 350 or untill hot,stirr top with 2/3 cup french fried onions. Bake an additional 5 min or untill onions are gold.
serves 12 so you can double the recipe if you are excpecting more.

Stir frys are really nice and noodles (if u like em are really good), and try mixing a bit of grilled chicken chopped up with salad and pasta perhaps? Not exactly 'posh' cooking, but cheap and cheerful!

Try a stir fry. Start off with onions, add leeks, courgettes, mushrooms, tomatoes. Season it all with Soy Souce and serve with rice and eggs.

make a soup .get 4 leeks chop anfry low heat with butter add astick of celery chopped wait till soft separately boil 3 chopped potatoes drain mix all together with 2 chicken sock cubes in boiling water put in blender add single cream blend again eat hot with french stick

there are millions of recipes for soups which can be filing (potato base) and of course healthy (as long as you dont add too much salt)
plus there are endless varieties of salads etc...just use your imagination...take what you like to eat and combine it with other things that you enjoy!!

try this salad: spinach leaves, sweet red bell pepper sliced into very thin strips not chunks, red onion (also sliced into thin strips), mandarin orange segments, peel a large carrot with a vegetable peeler into paper thin strips. tastes best with either a sweet onion or poppyseed dressing, or a raspberry vinagerette.
