The best is the one from Eagle Brand - you can usually find it on the label for sweetened condensed milk at this time of year:
Servings: Makes about 2 pounds
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Ingredients
3 (6-ounce) packages semi-sweet chocolate chips (3 cups)
1 (14-ounce) can Eagle Brand® Sweetened Condensed Milk (NOT evaporated milk)
Dash salt
1/2 to 1 cup chopped nuts
1 1/2 teaspoons vanilla extract
2-4 tablespoons (measures) of butter for extra creaminess
Instructions
In heavy saucepan, over low heat, melt chips with Eagle Brand® and salt.
Remove from heat; stir in nuts and vanilla.
Spread evenly into waxed paper lined 8- or 9-inch square pan. Chill 2 hours or until firm.
Turn fudge onto cutting board; peel off paper and cut into squares. Store covered in refrigerator.
This recipe is great for messing with - you can add marshmallows to the mix or flavoring (like orange or mint) or you can just sprinkly toffee chips or crushed candy canes on top before refrigerating and press them in a bit using wax paper.

Cocoa, sugar, cream, butter cooked in a saucepan on low until it begins to thicken (quite a long time, and requires constant mixing). Then taken off the burner and allowed to cool somewhat. Whip the mixture with an electric beater and put into a greased pan. Put in the fridge until set. Cut up into pieces and eat.
As to how much of each ingredient...for every cup of cream used, you should use 2 tbsp of cocoa, 1/4 cup of sugar and 1 tsp of butter. Using an electric beater to whip the candy makes it more airy than traditional fudges--almost like a truffle.

i"ve been making this fudge for yrs and everyone raves about it . i use the reciepe on the jar of marshmellow fluff, but the seacret is to make sure that the sugur is compleatly disolved and stir constantley this is delious fudge. i make for gifts my friends always ask are you making fudge this yr ? i can"t wait!!
